Description
The Utility Manager will oversee the production of the Utility team, collecting used dishes, plates, and utensils, loading dish machine and stacking washed items appropriately. In addition, collecting garbage, sweeping, mopping and upkeep of the overall cleanliness of the facility within certain parameters. This individual will manage the utility team including, training, scheduling, performance reviews and hiring. This individual will be responsible for taking inventory of specific items and ensuring those items have been ordered and organized appropriately.
WHAT YOU’LL DO
Collect used kitchenware from dining and kitchen areas.- Load and unload dishwashing machine.
- Wash specific items by name (e.g. wooden cutting boards, large pots and delicate china)
- Store clean pots, pans, dishes, glasses and equipment appropriately
- Ensure there are always enough clean pots, pans, dishes, glasses and utensils, especially during peak hours
- Maintain cleaning supplies stock, (e.g. detergents) notify purchasing manager when necessary
- Maintenance and oversight of the dish machine operation, promptly report any technical/performance issues, de-lime and detail weekly.
- Oversight and delegation of Utility cleaning list.
- Remove garbage regularly
- Sanitize the kitchen area and coolers, including the floor, walls, doors and handles
- Routine Cleaning of Cargo equipment (Speed Racks. Carts, Metro Racks)
- Cleaning and upkeep of supply rooms.
- Duties are subject to change based on the overall needs of the unit.
- Manage the utility team which includes, training, hiring, performance reviews, scheduling and delegating.
- Communicate regularly and clearly with the Executive Chef, to insure strong collaboration and the most efficient task management possible.
Skills, Knowledge & Expertise
High school diploma or GED required.- 1 year experience as a dishwasher in a large commercial food service facility preferred.
- Management of a team of 2 or more preferred.
- Requires lifting from 25-50 pounds.
- Willingness to work in hot, humid environment and on your feet for 8-hour shifts
- Ability to follow instructions and help with various tasks, as needed
- Time management skills
- Attention to detail and sanitation rules
- Availability to work during weekends and evenings
