Summary

• The Assistant Director of Wine is a stepping stone position allowing for grooming/training of an individual for eventual succession into the Director of Wine position. The focus of this position, aside from full time sommelier responsibilities, will be learning the skills necessary to move towards the Director of Wine position.
• Assistant Director of Wine (ADoW) will support the DoW in all day to day responsibilities. This includes but is not limited to purchasing, receiving, storage, distribution and security of all wine and beverage product, daily maintenance of all wine lists, updating and keeping POS system current, staff training and COGS tracking, month end and daily wine inventory. As well, nightly sommelier duties are part of this job (see sommelier job description). Acts as de facto DoW in the absence of the DoW
  
  

Essential Functions12. Ensure Inventory for known SOFs

• Assist and support the daily needs of the DoW
• Act as sommelier on the floor
• Assist in the receipt and storage of all wine product in their proper areas
• Act as de facto DoW in the absence of the DoW
• Updates daily cost credit sheets
• Restocks of wines from Main Cellar to Day Cellar daily
• Email an accurate BTG and Pairing wine inventory every Sunday
• Monthly inventory with DOW
• Accept weekly wine deliveries which includes attention to the following:
• Check vintage accuracy
• Check price accuracy
• Make sure delivery invoice matches email approved invoices
• Removal of boxes and trash from cellar
• Make copies of invoices and put 1 copy on DOWs desk and the other in APs box
• Maintain Cellars Organization and Cleanliness
• Responsible for accuracy and updating of Cellar keys
• Day cellar key
• Main cellar key
• White wine key
• Maintain the ongoing security of all wine assets
• Lead and manage Sommelier Team when DoW isn’t present
• Ensure daily SOP is being followed
  
  

Qualifications

Required

• 5 years floor experience as sommelier in high-end restaurant/ hotel
• 5 years experience assisting in the organization and upkeep of a large (1000 selection) wine cellar
• Excellent and effective trainer
• Pursuing certification through a recognized certification organization (W.S.E.T./C.M.S.)
• Certified or Advanced standing with W.S.E.T./C.M.S.
• Experience working with a large cellar (1000 selections) or with a Wine Spectator Grand Award cellar
• Basic understanding of the business of wine (purchasing, costs, asset protection).

SCHEDULE

• The typical schedule for this position will be 5 days a week with Tuesday and Thursday being usual days off.
• This schedule will, however, be dictated by operational needs and may be changed at any time to accommodate those needs.
