JOB TITLE: Director of Food and Beverage

JOB SUMMARY:
Manages the functional areas of the hotel’s food and beverage outlets to include the restaurant, bar/lounge, in-room dining, mini bar, catering/events, and kitchen operations. Ensures the highest level of guest satisfaction and associate satisfaction, while maximizing hotel profitability.
RESPONSIBILITIES:
- Supervision of Food and Beverage personnel and produce weekly schedule of department associates. Always provide support to staff by assisting is set up, service, and clean up. This position is highly visible in the hotel food and beverage outlets.
- Coordinate the purchase of operating supplies, equipment, food and beverage, and retail products. Closely monitor inventory controls of supplies and maintain required pars of all supplies and goods sold.
- Obtain competitive quotations for hotel requirements and ensure the best product is sourced and purchased.
- Assist with selection, training, counseling, and motivating hourly associates. Conduct performance reviews for all F&B associates.
- Monitor and maintain the expenses and payroll budgets for the Food and Beverage department.
- Assist the hotel management and sales teams with the implementation and execution of revenue programs, upsell initiatives, and industry trade shows in order to maximize the revenue potential of all the hotel outlets.
- Management of in-room Private Bar as it relates to the procurement, purchasing, pricing, promotion, and inventory controls of Food & Beverage and Retail offerings.
- Ensure food and beverage offerings meet presentation and quality standards.
- Check the quality of deliveries of fresh foods and bake goods. Check delivery quantities and pricing compared to purchase orders.
- Ensure new products, menus, and procedures are executed through proper rollout and follow up.
- Review group housing, billing, and event details and prepare group requirements as needed. Relay information to appropriate personnel.
- Ensure associates follow proper cash control and credit card procedures.
- Total receipts and balance against sales, deposits receipts, and ensure service area and product storage/ displays are closed down and secure at the end of the day.
- Ensure associates follow proper food handling procedures and alcohol controls. Responsible for training and maintaining company/local certifications. Responsible for all county and state health department and alcohol compliance.
- Increase level of guest satisfaction by improving product and services through procedure and employee development.
- Ensure associate appearance and grooming standards, as well as, attitude of attentiveness, anticipation of guests needs, and professionalism.
- Ensure proper delivery of guest special requests, amenities, and service recovery follow up.
- Operate all aspects of Food & Beverage and Retail computer systems, including full PMS and POS functionality, software maintenance, report generation and analysis, configuration changes, and music / TV platforms.
- Meet with and solicit comments from guests on a regular basis to determine their level and satisfaction with all guest services, product offerings, and facilities.
- Participate in community activities, associate functions, and guest events.
- Ensure effective departmental communication and information systems through logs, departments meetings, and hotel meetings. Conduct regularly scheduled meetings of F&B associates.
- Maintain an organized and comprehensive filing system with documentation of purchases, vouchers / adjustments, schedules / labor controls, forecasts, reports, and tracking logs.
- Communicate with the General Manager daily. Inform General Manager of any problems with guests and with progress of assigned projects.
- Responsible for knowing hotel and emergency procedures. Train associates to act accordingly in the event of an emergency or accident at the hotel.
- Perform “Manager on Duty” responsibilities as required.
- Carry out any reasonable request by Management or Ownership that you are capable of performing.
- Required to work based on business demand to include nights, weekends, and holidays.
Job Type: Full-time
Pay: $63,000.00 - $70,000.00 per year
