JOB TITLE: Smoke House Operator
DEPARTMENT: Smoke House
REPORTS TO: Processing Supervisor
EFFECTIVE DATE:
SUMMARY: A Smoke House Operator transports products in and out of the smokehouse; Advises what product will go into smokehouses; Inspects carts of product for proper stick placement and proper placement in the smoke house.
DUTIES AND RESPONSIBILITIES:
- Knows and adheres to the rules of Good Manufacturing Practices (GMP).
- Knows and adheres to the safety procedures; Reports safety concerns to Packaging Manager.
- Notifies processing team leader as to what product is to be loaded to which smoke house.
- Provides corresponding number to be attached to the carts with the exact number of carts per smoke house
- Loads smoke house with the same product as much as possible; Decides what product will be combined to fill the smoke house.
- Removes condensation from the ceiling, cleans the floor of all soap and other debris that would cause contamination.
- Assists moving the trucks into the smoke houses.
- Inspects each cart as it is loaded into the smoke house for proper stick placement and to line up the sticks as needed and to properly load the smoke house.
- Insures offracking area is prepared; Discharging area is clean and materials are dried and in the area that the product is to be offracked.
- Unloads the cars, moves empty carts out of the way of the offrackers, weighs and documents all filled containers; Supplies additional empty containers to offrackers.
- Help unload other smokehouses.
- Fill in as needed in other departments or shifts.
- Performs other related duties as assigned by management.
QUALIFICATIONS:
· High school diploma or general education degree (GED), no prior experience necessary.
· Ability to read and comprehend simple instructions, short correspondence, and memos. Ability to print and speak simple sentences.
· This position does not require any math skills.
· Ability to apply common sense understanding to carry out simple one- or two-step instructions. Ability to deal with standardized situations with only occasional or no variables.

PHYSICAL DEMANDS AND WORK ENVIRONMENT:
· While performing the duties of this job, the employee is regularly required to stand; walk; use hands to finger, handle, or feel; reach with hands and arms, balance, bend, stoop, crouch and talk and hear.
· The employee must regularly lift and/or move up to 10 pounds, frequently lift and/or move 30 pounds, and occasionally move carts/gondolas full/empty on wheels weighing up to 700 pounds with assistance.
· Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception and ability to adjust focus.
· While performing the duties of this job, the employee is occasionally exposed to wet and/or humid conditions, moving mechanical parts, temperature vary from 30 to 120 degrees; Minimal risk of electric shock.
· The noise level in the work environment is usually loud to very loud.
