Purpose and function of job :
The Team Cook / Expeditor works under the supervision of the Food and Beverage Supervisor and Food and Beverage Manager. The Team Cook / Expeditor is a two-fold job that is responsible for preparing pre-game and post-game meals for both home and away teams and also acts as a liaison between suite runners and suite servers to ensures a steady workflow throughout the various departments of the stadium. The Team Cook / Expeditor performs all job tasks in compliance with the philosophy, policies, goals, and budget of Traverse City Baseball, Inc.
Essential Duties and Responsibilities :
Essential duties and responsibilities of this job classification :
- Must be able to prepare meals that produce 80 servings both before the game and after the game to serve to the respective home and away teams playing that day.
- Ability to plan out meals and utilize different products on hand to ensure efficient product and inventory turnover.
- Ability to manage time properly and prepare high volume meals in a limited time frame.
- Ability to communicate and work with the clubhouse assistant to ensure team meals are delivered at proper times and within proper temperature ranges.
- Must gain knowledge of suite level menu items and all ballpark concession products.
- Ability to prep food, organize pre-orders for suites, and manage time efficiently to ensure pre-ordered food arrives in the proper suite prior to guest arrival.
- Works with the concession stand staff to maintains quality control and monitors food safety.
- Oversees suite runners to ensure they understand their tasks and are able to carry them out over the course of a game.
- Ensures that all food is presentable and all order are filled correctly before runners transport the orders to the suite level.
- Complete any projects designated by Food and Beverage Manager or Suite Supervisor.
- Keep work area clean and organized throughout the event.
- Ensures suite runners carry out all closing tasks such as washing dishes, sweeping, and mopping among other tasks to maintain a clean and sanitary space.
- Assists with training and management of health code standards.
- Assist with organizing the kitchen and storage rooms, keeping it clean.
- Other duties as assigned.
