Position Summary:
The Back of House (BOH) Team Lead plays a pivotal role in ensuring the success of Trellis Coffee Bar’s bakery operations. This leadership position is responsible for overseeing the BOH team, maintaining production excellence, and fostering a positive and collaborative workplace culture. Reporting directly to the General Manager (GM), the BOH Team Lead focuses on baking and overseeing the execution of all back of house production, ensuring all baked goods meet the Trellis Standard in quality, consistency, and safety.

Key Responsibilities:
Team Lead
- Staffing: You are responsible for working alongside the GM to assemble and maintain a team of awesome bakers who are passionate about Trellis and baking! This involves notifying the GM when staffing needs change, participating in the interview process and functioning as the BOH trainer for all BOH specific skills and tasks.
- Scheduling: You are responsible for working with the General Manager to schedule appropriately by not under or over staffing according to labor budget parameters. You will manage all BOH time-off requests by communicating and coordinating with the GM.
- BOH Supervisor: You will work with the GM to ensure positive team culture, as well as consistency and quality in adherence to Trellis Standards. This includes:
- Culture: Foster a positive work environment that promotes teamwork, collaboration, and mutual respect.
- Communication: As the primary point of contact between bakers and the lead team. This includes staying in compliance with the Trellis Communication Standards. You are responsible for making sure the BOH is informed and up to date on information necessary for the BOH team to function well and with clarity.
- Production & Presentation (see notes below)
- Inventory: You are responsible for keeping track of inventory levels for BOH ingredients, supplies, and finished products, and placing timely orders with the GM Systems & Process manager to maintain adequate stock levels.
- Quality, Production and Development: You are responsible for overseeing all aspects of the baking process, including ingredient preparation, mixing, shaping, proofing, baking, and finishing. The Back of House production is required to be consistent, high quality, meet demand, adaptable, and unique.
- Meets Demand: Monitor production levels and work with the GM to adjust staffing and workflows as needed to meet demand while minimizing waste.
- Consistent: Ensure that all recipes are logged in reciprofity and that all baked goods are produced according to recipes, quality standards, and production schedules.
- High Quality: You are responsible for maintaining high standards of quality and consistency in all baked goods, ensuring they meet our specifications. You are responsible to conduct weekly inspections of finished products to identify any issues or defects and take corrective action as necessary.
- Adaptable: You are responsible for managing the intake and communication for all catering/large order food-related requests.
- Unique: Once established and comfortable with all existing bakes, you will be responsible for workshopping and proposing one menu adjustment each quarter. All final menus will require approval by the GM and COO.
- Recipe Management: You will be responsible for maintaining and updating reciprofity with new recipes for all BOH items. You will propose pricing for BOH products to GM/COO for approval when new products are proposed for new menus.
Health, Safety, Organization and Cleanliness:
- Health & Safety Compliance: While the General Manager is responsible for shop-wide compliance with health and safety regulations, including food safety standards, cleanliness, and hygiene protocols, you are responsible for ensuring compliance in BOH. This includes ensuring you and your team maintain an active ServSafe Certification.
- Cleaning and Organization: The BOH cleaning and organization is the responsibility of the bake team. You will be responsible for working with the GM to execute the BOH cleaning, maintenance and organization plans for all kitchen spaces and equipment. The General Manager will ensure maintenance is scheduled and completed, while you are responsible for ensuring the cleaning and organization plans are executed.
