Position Overview:
We are seeking a talented and experienced Sous Chef to support the Executive Chef in managing all aspects of kitchen operations, including à la carte service and banquet functions. The ideal candidate will be a motivated and skilled culinary professional who thrives in a high-paced environment and has a passion for culinary excellence. As Sous Chef, you will play a critical role in menu creation, staff management, and ensuring that every dish is prepared to perfection.
Key Responsibilities:
- Kitchen Leadership & Supervision: Assist the Executive Chef in overseeing daily kitchen operations, including food preparation, cooking, and plating. Manage and lead kitchen staff, ensuring they work efficiently and effectively in a high-paced environment.
- À la Carte Service: Oversee the preparation and execution of menu items during à la carte service, ensuring consistency, quality, and presentation.
- Banquet & Event Support: Assist with planning and executing large-scale events, including banquets, weddings, and special functions. Ensure that all food is prepared to the highest standards and meets guest expectations.
- Menu Planning & Recipe Development: Collaborate with the Executive Chef to develop seasonal menus, specials, and banquet offerings that reflect the club’s standards of excellence.
- Inventory & Ordering: Manage inventory control, ensure proper stock levels, and assist in ordering food and supplies.
- Minimize waste and ensure the efficient use of resources.
- Staff Training & Development: Train and mentor kitchen staff on culinary techniques, safety protocols, and health standards. Ensure that all staff is fully equipped to deliver exceptional service.
- Health & Safety Compliance: Must maintain a clean, organized, and safe kitchen environment. Adhere to all food safety and sanitation guidelines, ensuring a safe working environment for all staff.
Qualifications:
- Proven experience as a Sous Chef or in a similar role in a fine dining restaurant, country club, or high-end catering setting.
- Strong knowledge of kitchen operations, food safety standards, and culinary techniques.
- Ability to manage and inspire a diverse kitchen team in both a fast-paced à la carte and banquet setting.
- Exceptional organizational skills with a keen eye for detail and consistency.
- Creativity and a passion for culinary innovation.
- Strong communication skills and the ability to work collaboratively with the kitchen and front-of-house teams.
- Flexible and adaptable to the demands of a busy country club environment.
- Culinary degree or equivalent experience preferred.
