The Head Baker is responsible for ensuring that all bakery items are always prepared and baked in-house to the highest quality standards. The Baker will create the oven baked goods menu and oversee bakery operations, ensuring the bakery is stocked daily in order to provide an exceptional culinary experience in the café.
This position’s compensation is an hourly wage.
Baker Job Responsibilities:
- Prepares, produces and bakes breakfast pastries, breads, lunch items and desserts to meet UCR’s quality standards
- Creates and modifies the bakery menu based on food trends, food costs, and seasonal availability.
- Trains, coaches, and oversees bakery staff to ensure baked goods consistently meet UCR’s quality standards.
- Sets time and speed controls for mixing machines, or blending machines, so that ingredients will be mixed or cooked according to instructions.
- Measures or weigh flour or other ingredients to prepare batters, doughs, or fillings using scales or graduated containers.
- Prepare garnishes as needed for baked goods and other food items
- Maintains adequate supply of all prepared products on hand and ensures the proper storage and refrigeration.
- Keeps spoilage/waste to a minimum by ordering and utilizing proper quantities and rotating products.
- Cleans, breaks down, and puts away all baking equipment including: ovens, mixers, floors, freezer, and refrigerators.

- Maintains a clean and organized bakery area.
- Follows and ensures all food, safety and hygiene guidelines are being met in accordance with state and local health departments.
- Provides accurate ingredient information for product labeling and packaging.
- Attends industry related training classes for personal growth and career development.
