Description :
The Food Service Manager is responsible for ensuring the kitchen is prepared to provide complete meals to camp and preparing those meals as assigned for three meals a day; breakfast, lunch and dinner, to campers and all camp staff. The Food Service Manager is responsible for directing all kitchen staff (Cook and Kitchen Staff) to ensure that meal times are satisfactory, meet all safety standards and ensure that it all runs efficiently.
Food Service Manager Specific Tasks
Create a menu for all meals served at camp according to state and grant guidelines and camper / staff dietary restrictions
Prepare complete meals on time as assigned
Order food and ensure that all meals have the appropriate supplies to prepare them.
Hold kitchen staff accountable for keeping the kitchen and dining hall clean after every meal
Ensure there are menu items that can be served in case of a power outage or malfunction of refrigerators or ovens
Keep the kitchen and dining hall clean and safe and supervise kitchen staff assisting with that task.
Keep the kitchen organized and free of clutter
Report facility issues to the Property Manager in a timely manner
Must be able to stand, walk, kneel, sit for long periods of time
Must have great communication skills, both verbal and written
General Camp Tasks
Follow all camp rules and ensure that staff and campers are as well.
Abide by Personnel Policies & Procedures of the ULBGC Camp.
Follow all State of Wisconsin, American Camp Association, Serv Safe, the Summer Food Assistance Program, and other certifying body guidelines.
Some lifting and carrying up to 50 pounds
Desire to work collaboratively on a team, with openness to feedback and a desire to grow professionally
Ability to maintain an excellent work ethic, high level of energy, and exceptional enthusiasm each day
Trainings and meetings
Attend trainings pertinent to running the camp’s kitchen
Attend staff training sessions as deemed appropriate by the Camp Director
Check in with Camp Director regularly.
Supervisory
Ensure that all kitchen staff are keeping the area safe and working according to their job description
Ensure that all staff are following the rules of the dining hall and making sure that all campers get complete, healthy meals
Check in regularly with manager and kitchen staff
Complete a mid summer and end of summer evaluation for all staff direct reports and help the leadership team evaluate their staff
Complete other tasks as assigned
Requirements :
Must be at least 21 years old
Must have a passion to provide healthy, complete meals to young people
Serv Safe Kitchen Manager certified
Good health and a physical condition suited for kitchen work and long hours
Must have experience preparing meals for at least 150 people
