We’re looking for a passionate Pastry Chef to join our DC team! Our ideal candidate is passionate about food, beverages, and welcoming customers through our doors. You have experience in successfully managing a team, fostering unity, and working together to accomplish daily goals. No task is too small for you. You’ll be able to speak authentically about who we are, and every item on our food and beverage menu. You love cookies, you are always ready to lend a helping hand to a colleague & you don’t take yourself too seriously. You will be based at our DC Commissary location. Responsibilities of this Role (What you’ll do) :
You will be working as the Pastry chef of Maman in the DC area in the commissary kitchen located at Union market.
You will be in charge of the Pastry department working in close contact with the Savory Chef and Pastry Director.
Organization of the production of the menu with the team
Event and Catering orders production
Hiring, training and schedule management
Supplying different locations of freshly baked goods on a daily basis
Cost controls, stock counts, ordering
Quality and quantity control in regards to the company standards
Help lead a team of {approx. 15 people}
Report directly to your supervisors, and effectively communicate with them regarding your team
Organizing commissary deliveries for the stores in a timely manner.
Answer company emails in a timely manner.
Ensure food and labor costs stay consistent and follow company guidelines.
Keep an eye on your kitchen financial results and motivate your team to constantly go above and beyond.
Create a dynamic and RESPECTFUL work environment with little to no pressure for yourself and the team. (Everything is about anticipation and organization).
Communicate with other departments (General Managers, HR, savory department, Finance department, Regional Director, maintenance department..) and higher management in a timely manner.
Maintain the cleanliness of the kitchen and production at the highest standards and as per the health department guidelines.
Maintain the quality standards at the highest point and the fulfillment of the orders at the maximum quantities.
Guide and drive a team of bakers and porters with daily tasks as well as your production supervisors.
Adapt and resolve different types of situations that you are facing.
Work a flexible schedule that will include weekends, holidays, special events, and or occasional emergencies if needed.
Requirements (What we're looking for) :
Be dynamic, passionate, pedagogue and organized.
Be a great communicator.
Able to perform all tasks required to the production of baked goods. (lifting, cutting, shaping, scaling, pipping…)
Be a solution oriented person.
Share, teach, train your knowledge and passion for the work.
Have a sense of urgency and priority.
Have knowledge in French and American baked goods including fermentation, lamination, dough, quick bread, cakes and different types of creams and fillings.
Have minimum 1-2 years leadership experience
You take complete ownership of your team, cafe and everything needed to provide the best experience to customers
You have a good instinct of knowing what problems to solve on your own, and which ones need to be escalated
You ensure food and safety at all times, and have a servsafe certificate
