Nestled at the base of Vail Mountain, in the heart of the renowned Vail Village, The Lodge at Vail combines a perfect location and exemplary service with the famously classic ambiance of an alpine-inspired Vail resort.
An Advanced Cook at the Lodge at Vail functions as a very experienced cook, responsible for performing the full range of the most difficult cooking tasks. In addition to cooking complex menu items, prepares sauces and glazes to enhance flavors. Improvises on established recipes based on availability of ingredients. Suggests, develops, and tests new recipes and menu items. May assist with ordering and inventory management. Oversees food preparation and provides training and guidance to more junior staff
Job Description:
- Able to cook, bake, work hot line , banquets .
- Assists in maintaining smooth operations in the kitchen during assigned shift.
- Supervises and coordinates the line crew to achieve assigned tasks according to kitchen standards.
- Cook and prepare food to order on daily basis for restaurant, EDR, Banquets, or live action stations.
- Assure safe and clean work conditions for all personnel.
- Maintain a 100% satisfaction rate and take full responsibility for quality of food.
- Capable of creating attractive buffets stations.
- Stays abreast of all culinary trends and cultivates creativity among the culinary team through innovative daily specials
Qualifications:
- High school diploma or equivalent. -required
- Culinary degree or certificate. -preferred
- Minimum 4 years line cook experience. -required
- Must be able to perform at a high level on any line station and be able to assist with all phases of food preparation. -required
- Previous supervisory experience. -preferred
- Previous experience in a hotel/resort Food & Beverage department. -preferred
- Previous experience with menu costing and food ordering helpful. -preferred
- Expert in cooking techniques. -required
- Must be familiar with Microsoft Office applications including MS Word, Excel and Outlook. -required
- Must be able to communicate clearly in English both written and verbal. -required
- Ability to communicate in Spanish. -preferred
- Must be able to work the breakfast shift. -required
- Must be able to stand for up to 8 hours. -required
- Must be able to lift 50 lbs. -required
- Must love to snowboard, ski or just enjoy the Colorado winter. A balance of work and personal life is key. -required
