Vail Mountain Dining Pastry Chef, Game Creek - Winter Seasonal, Full Time
Nestled just below Eagle's Nest and just above the Game Creek chair lift, Game Creek Restaurant is a truly unique location where guests can enjoy a gourmet dinner and an exceptional dining experience while overlooking the beautiful Game Creek Bowl. Game Creek Restaurant offers delectable, five-star, distinctive American cuisine complimented by an award-winning wine list and superior service. This breathtaking European chalet-style restaurant is accessible only by snowcat in the winter.
Responsibilities Include (but are not limited to):
- This individual is career oriented, creative, active, and is a culinary leader with general leadership qualities, who is able to work unsupervised, manage a kitchen in the Chef's absence.
- This person is either a graduate of a two year culinary program with two years post graduate quality experience, or has at least five years experience in quality establishments.
- Supervise lower level cooks in regards to food handling including: rotation, sanitation of all storage areas, labeling and dating, and ensure all storage areas are maintained.
- Apply Vail Mountain Dining standards for speed and quality.
- Will be responsible for all pastry operations at Game Creek Club.
- Supports company philosophy, goals, and objectives.
- Prep and work assigned station quickly and cleanly.
- Follow prep sheets accurately and with a sense of urgency.
- Prepare all pastry products to the specifications of the Chef.
- Read, understand, and follow recipes and standards.
- Take an active role in the apprentice program and the development of apprentice skills.
- Advises higher rated cooks and/or management of anticipated problems. Assist in the menu development process
- Assists in the direction and supervision of staff. Assist in the creation, usage, and follow through of prep lists, cleaning list, and closing lists.
- Assists in food ordering.
Qualifications:
- High school diploma or equivalent - required.
- Must be able to lift and carry 40 lbs - required.
- Must be able to stand for 8 hours - required.
- Must be fluent in English - required.
- 5 years pastry experience in a fast-paced restaurant - required.
- Previous supervisory experience - required.
- Team oriented attitude is a must - required.
- Must be available to work weekends and holidays including: Thanksgiving, Christmas Day, December 26th through January 2nd, Presidents’ Day Weekend, and any other holidays as requested - required.
- ServSafe certification - preferred.
