Job Description
General Summary: Assist the Pastry Chef in overseeing culinary team operations and activities engaged in preparing and baking foods in the Pastry Shop.
The Assistant Pastry Chef prepares bread, rolls, muffins, biscuits, and dessert items according to recipe, and decorates plates, cakes, tarts, petit fours, etc.
Main Responsibilities:
- Assist the Pastry Chef in overseeing culinary team operations and activities.
- Prepare bread, rolls, muffins, biscuits, and dessert items according to recipe.
- Temper products, including fruit reductions, chocolates, frostings, and pate a choux.
- Decorate plates, cakes, tarts, petit fours, etc.
- Evaluate proper rotation and storage of specialty items, reporting any abuse to Management.
- Maintain all health regulations to prevent foodborne illnesses.
- Ensure compliance with HACCP (Hazard Analysis Critical Control Points) and hygiene standards.
- Operate, maintain, and clean all equipment and kitchen utensils.
- Review advance menus with Pastry Chef to determine amounts, types, and methods for preparing baked goods.
- Verify production schedules and par levels to determine product variety and quantity required.

Requirements:

- Thorough knowledge of pastry-related food equipment.
- Able to work in a fast-paced environment with high stress.
- Demonstrate dependability, timeliness, and attention to detail.
Education and Experience:
- High school diploma or equivalent required.
- Food Handler's Card must be obtained before commencing duties.
- Minimum 3-5 years related experience, or equivalent combination of education and experience.
- Supervisory experience is required.
