Primary Purpose:
Assist cafeteria manager with kitchen operations at assigned campus, including all off-site locations. Provide a nutritious, well-balanced meal for the student population and assist the cafeteria manager with kitchen operations, planning and organizing and supervision of the cafeteria staff at assigned campus(es) and off-site locations. Operate kitchen in absence of Cafeteria Manager, or if assigned to temporarily operate a kitchen. Assists with the data entry of production records, placing orders, monthly inventory, and gathering HACCP logs and safety folders for all off-site locations.   
 
Qualifications:
 
Education/Certification:
High school diploma or GED, preferred
Valid Texas driver’s license
Must be eligible to drive based on the Texas DPS School Transportation Guidelines
Attend and pass ServSafe Certification per district policy and possess ServSafe Certification
 
Special Knowledge/Skills:
Ability to follow oral and written instructions and have basic reading, writing, and math skills
Understand operations, safe work procedures and how to clean kitchen and equipment
Ability to use personal computer and software to develop spreadsheets, databases, perform word processing.
Proficient keyboarding, file maintenance and 10-key skills
Ability to meet established guidelines
Have training and be able to train personnel in food production and program accountability
 
Experience:
One to two years of food production experience, preferably within a school district.
Six months to one year of clerical experience, preferred.
Experience using Primero Edge food production software, preferred.
 
 
Major Responsibilities and Duties:
  1. Assist cafeteria manager with daily operations and staff management.
  2. Input information and run daily, weekly, and monthly reports, review daily reports and complete close down procedures in PrimeroEdge (Cafeteria POS Software System) program.
  3. Assist in all areas of food production, including understanding production records, completing production records in a timely basis in PrimeroEdge online Menu Planning Software and following recipes as written. Plan and delegate production of meals to meet menu and other line requirements, including portion control and use of correct serving utensil sizes to meet regulations/production records.
  4. Maintain all necessary records in a neat and organized fashion for easy access, and all bulletins from Child Nutrition Services are posted. Maintain a neat and orderly kitchen, office, frozen, refrigerated and dry storage areas, loading dock, equipment and servery.
  5. Maintain safety bulletin board(s), and ensure most current postings are visible and updated, post all employee Health Department permits and Manager/Lead ServSafe Certificate(s).
  6. Maintain safety and sanitation standards at all times. Train staff on use of SDS (Safety Data Sheets) location and usage.
  7. Enter planned numbers for daily food production of all off-site units.
  8. Order products according to expected customer estimates and be able to receive items into kitchen using established check-in procedures.
  9. Manage and reviews HACCP logs for all off-site feeding locations. 
  10. Manage and reviews counting and claiming records at off-site locations.
  11. Perform opening and closing reports.
  12. Provide instruction and training for new employees and in-service training as needed.
  13. Assist as needed with setting up and serving food.
  14. Perform all data entry is entered accurately for all campuses in “So Happy” online application.
  15. Work with others in a positive, productive manner.
  16. Enter Inventory in Primero Edge database bi-monthly for assigned location(s).
  17. Compile, maintain, and file all physical and computerized reports, records, and other documents as required.
  18. Perform food orders from approved vendors as needed.
  19. Performs safety and sanitation audits at all locations.  Reports findings back to supervisor with action plan for improvement.
  20. Follow District policy regarding the reporting of equipment issues, work order requests and follow up to work orders.  Understand calling tree for calling in emergency and routine work orders. 
  21. Perform other duties as assigned.
 
 
Supervisory Responsibilities:
Manage cafeteria staff in the absence of the cafeteria manager
           
Equipment Used:
All industrial kitchen equipment, broom, mop, PC computers and related software, copy machine, and calculator

Mental Demands/Physical Demands/Environmental Factors:
Maintain emotional control under stress.  People intensive.  Frequent interruptions, hectic pace, quick deadlines. Typical school environment. Continuous standing, stooping, walking, climbing ladders, bending, pushing and pulling, grasping, squeezing, twisting, reaching (including overhead), must be able to lift and carry items weighing up to 50 pounds. Working indoors in extreme temperatures including hot and cold temperature swings, works with chemicals, exposure to dust, and on slippery or uneven walking surfaces.
