Job Summary
The Pitmaster will be responsible for our smokery, creating smoked meats that keep customers coming back. This role involves managing the smoking process, from custom spice blends to mastering wood smoking and temperature control.
Main Responsibilities:
- Prepare and smoke various meats with consistency and quality in every batch.
- Oversee smoker operations, including wood selection, temperature control, and timing.
- Calculate daily PAR levels for all smoked products.
- Develop and maintain recipes for rubs, marinades, and sauces.
- Maintain a clean and organized work environment, adhering to health and safety regulations.
- Collaborate with the kitchen team on menu items and recipe development.
- Keep the smoker and equipment clean and well-maintained, performing routine maintenance.
- Ensure high-volume production while maintaining exceptional quality.
- Coordinate and execute cooking schedules for all smoked products.
- Slice, pull, and chop cooked products to meet quality standards.
- Create daily, weekly, and seasonal specials with the team.
- Assist the day crew as needed.
Requirements & Qualifications:
- A plus to have experience in the restaurant, food, or hospitality industry, but not required.
- Possess passion for barbecue and commitment to delivering high-quality dishes.
- Able to stand and move throughout the entire shift.
- Eager to learn and follow instructions.
- Capable of working efficiently in tight spaces and maintaining a fast pace during busy shifts.
- Reliable transportation to and from the workplace.
- Strong communication skills.
- Flexibility to work unconventional hours, including nights and weekends.
- Self-motivated with a high-energy attitude and sense of urgency.
- Weekend availability is a must.
- Able to lift up-to 100 lbs repeatedly throughout the shift.
