Job Overview:

Wildman Lodge, a remote hunting and fishing lodge located on the Alaskan Peninsula, is seeking an experienced and dedicated Chef for the upcoming season. The season runs from June to mid-October, and the selected candidate must be willing to commit to the entire duration of the season. The Chef will be responsible for curating the seasonal menu, preparing and serving three meals a day, and managing the kitchen operations while ensuring all meals are well-presented and meet high standards.

Lodging and meals will be provided at the lodge. If you are unable to commit to the entire season but feel you meet the qualifications, we encourage you to apply as we may have flexibility for the right candidate.

Responsibilities:

  • Curate a seasonal menu in collaboration with lodge management, ensuring a variety of meals that cater to diverse dietary needs and preferences.
  • Prepare and serve three high-quality meals per day for lodge staff and guests, ensuring meals are both delicious and visually appealing.
  • Maintain a clean and organized kitchen, including food storage areas, and adhere to all health and safety standards.
  • Keep an up-to-date inventory of ingredients, supplies, and kitchen equipment, and place orders as needed to ensure a steady supply of necessary items.
  • Manage the preparation of meals using local ingredients and traditional Alaskan ingredients when possible.
  • Assist with food-related events and special requests for clients, such as custom meals for celebrations or holidays.
  • Ensure that meals are served on time and at the correct temperature, maintaining a high standard of presentation and quality.
  • Adapt to various situations, including remote conditions and diverse guest preferences, with flexibility and creativity.

Requirements:

  • Proven experience as a chef, ideally with experience in remote or rustic settings, such as lodges, resorts, or wilderness camps.
  • Ability to plan, prepare, and serve high-quality meals for large groups, often in challenging conditions.
  • Strong knowledge of food safety and sanitation standards, with the ability to manage kitchen operations independently.
  • Exceptional time management and organizational skills.
  • Willingness to live at the lodge for the entire season (accommodation and meals provided).
  • Ability to work in a remote, self-sufficient environment with a positive attitude and strong problem-solving skills.
  • Adaptable mindset – ability to adjust, think on your feet, and make things work when conditions or plans change unexpectedly.
  • Ability to accommodate diverse dietary needs, including but not limited to vegetarian, gluten-free, allergy-friendly, and other special dietary preferences.
  • Ability to work well with a team – strong interpersonal skills and a collaborative mindset, as you will be working closely with lodge staff and management to ensure a smooth operation.

Additional Preferred Qualifications:

  • Ability to manage the kitchen during high-stress periods and maintain a calm, efficient workflow.
  • Formal education from a culinary school or culinary related training is a plus
