Position Overview:
The Brewer at Wisconsin Brewing Company is responsible for overseeing and executing all aspects of the brewing process, ensuring high-quality production while maintaining safety and operational standards. This role requires a strong understanding of brewing science, adherence to standard operating procedures, and mechanical aptitude. The Brewer will collaborate with team members to maintain efficiency in production, assist with recipe development, and uphold quality assurance protocols.
Responsibilities:
· Manage daily brewing operations, including grain handling, mashing, lautering, boiling, fermentation, and packaging processes.
· Maintain strict quality control throughout the brewing and fermentation process.
· Oversee and perform routine cleaning and sanitation of brewing equipment and work areas.
· Conduct yeast management, including pitching, harvesting, and viability testing.
· Operate and maintain brewing systems, including pumps, valves, and hoses.
· Monitor and record key brewing metrics, such as temperatures, gravities, and pH levels.
· Manage CO2 and O2 measurements to ensure beer quality.
· Assist in recipe development and pilot brewing processes.
· Perform filtration, transfer beer between vessels, and oversee carbonation processes.
· Ensure compliance with safety and regulatory guidelines.
· Train and mentor Assistant Brewers and Cellarmen.
· Occasionally represent Wisconsin Brewing Company at events, festivals, and promotions.
Knowledge and Skills:
· Strong understanding of brewing science, ingredients, and fermentation processes.
· Knowledge of brewing equipment operation, troubleshooting, and maintenance.
· Ability to follow standard operating procedures and maintain detailed records.
· Familiarity with quality assurance and laboratory testing methods.
· Strong organizational and time-management skills.
· Ability to work both independently and as part of a team in a fast-paced environment.
· Mechanical aptitude with pumps, valves, and hoses.
· Forklift and scissor lift operation experience preferred.
Education and Training:
Degree in Brewing Science, Fermentation Science, Food Science, or related field preferred.
Professional brewing experience required (minimum of 2-3 years preferred).
Certifications in brewing and safety protocols are a plus.
Forklift certification preferred.
