We are seeking a highly skilled and passionate Executive Sushi Chef with 5 years of experience to lead our sushi kitchen with finesse and vision. As the Executive Sushi Chef, you will be the heart of our culinary team, bringing both your expertise in sushi craftsmanship and your ability to inspire and guide others. You will play a pivotal role in maintaining our restaurant's reputation for excellence, ensuring that every dish reflects our commitment to quality and innovation.

The Zenzi Den Executive Sushi Chef's responsibilities include melding liveliness and creativity into a focused and collaborative environment. Potential candidates must be competent with various aspects of fish butchery, particularly as applied to Japanese inspired cuisine. Experience in a fine dining sushi establishment and confidently displaying the feel-good hospitality that Ballyhoo is known for are both important for this position.

Concept Overview:

Opening in 2025 and located in downtown Glenview, IL, Zenzi Den is the newest concept from Ballyhoo Hospitality. The restaurant brings a lively yet casual atmosphere with Japanese influences. The space is thoughtfully designed to incorporate natural textures, creating an inviting dining experience. The menu includes a range of traditional and contemporary dishes, from fresh sushi and sashimi to flavorful potstickers and unique small plates made with high-quality ingredients. Whether guests are looking for a relaxing meal or a place to unwind with friends, Zenzi Den offers a confidently welcoming environment where guests can savor a delicious meal with colleagues, friends, and family.

Responsibilities:

  • Lead and manage the sushi kitchen team, fostering a collaborative and positive work environment.
  • Develop and refine sushi menus, incorporating seasonal ingredients and innovative techniques while respecting traditional Japanese methods.
  • Oversee the preparation and presentation of all sushi dishes, ensuring they meet our high standards of taste and appearance.
  • Train and mentor sushi chefs and kitchen staff, promoting continuous learning and development.
  • Manage inventory, order supplies, and ensure the freshness and quality of all ingredients.
  • Maintain a spotless and efficient kitchen, adhering to all health and safety regulations.
  • Collaborate with the management team to enhance the overall guest experience.
  • Engage with guests to share your knowledge and passion for sushi, enhancing their dining experience.
  • Stay updated on industry trends and culinary innovations to keep our offerings fresh and exciting.

Qualifications:

  • Proven experience as an Executive Sushi Chef or similar leadership role in a fine dining sushi restaurant.
  • Culinary degree or equivalent professional experience.
  • Extensive knowledge of traditional and contemporary sushi techniques.
  • Strong leadership and team-building skills, with a track record of training and mentoring staff.
  • Passion for culinary excellence and a commitment to providing exceptional guest experiences.
  • Strong communication skills and a collaborative spirit.
  • Excellent organizational and time-management abilities.
  • Ability to work under pressure and maintain high standards in a fast-paced environment.
