To be able to initiate product and/or processing concepts from idea to final production start-up. Spearhead new technology development and its applications into all baked goods area.
Principal Accountabilities
  • To work, both in a “hands-on” environment and/or direct as needed, ideas and concepts into product reality.
  • Utilizing practical and technical abilities both of his/her own and /or other team members, make changes, samples, adaptations as required.
  • Utilizing services available – laboratory, accounting, packaging, technical services, marketing, engineering, etc. – ensure that product(s) are followed through to channels for final approval for sale.
  • To advise and guide, as requested, other R & D team members and other departments throughout Bimbo Bakeries USA, on practical and technical matters as necessary.
  • To prepare specifications and process operating guides for product developments and ensure flow of documentation is communicated to those who have a need to know.
  • To conduct staff meetings/reviews or write reports/memos from time to time on current status of developments.
  • To ensure, continuous communication with all R & D members of Corporate and regional product development teams throughout Bimbo Bakeries USA and any other groups that may be added in the future.
  • Where product developed is scheduled for test marketing, to accept responsibility for such production on a regular basis.
  • To maintain a daily log of outlining project status and activities in such detail that others may continue the test.
  • To lead in special projects concerning products, processes, equipment, and facility concepts and design.
  • Where approved, to travel to all Bimbo Bakeries USA technical facilities and Copackers to independently and effectively accomplish R & D objectives and interface professionally with representatives of the same.
  • To carry out the above responsibilities and any other that may arise from time to time at the request of his/her Section Manager or Director of Product Development.
DimensionsResponsible for all R & D objectives including New Product Development, New Technology Development, Quality Improvements, Ingredient Technology, and Productivity Projects.Background/ExperienceExperience Required: Experience in food and/or bakery technology (7 years minimum). Extensive knowledge of formulating within several categories including Fermented Sweet Doughs/Danish, Cake Batters, Cookies, Donuts, Pies, & Rolls. Need to know ingredient functionality within Sweet Baked Goods category and handle basic laboratory equipment to conduct shelf-life tests. General knowledge of processes in Baking, ideally focused in Sweet Baked Goods (mixers, baking, crème and icing preparation, chocolate compounds).
Specialized or Technical knowledge required: BA or MA (preferable Food or Bakery Technology or related Scientific Degree), AIB or equivalent bakery training – working knowledge of bakery or food engineering will be an advantage.
