Primary Function

To assist the cook in preparing food, cleaning up, washing dishes, putting away stock, helping with the tray line, delivering food to the inpatients and performing any other food service duties in the kitchen as needed.

Job Description

General:

  • Loads and unloads dishwashing machine. Maintains water and detergent levels in dishwasher; removes strainer pans, inspects dish machine for cleanliness.
  • Records wash and rinse temperature of dish machine daily.
  • Perform cleaning duties as assigned by the daily, weekly, and monthly cleaning scheduling.
  • Takes out trash, Clean Sinks, Clean and disinfect Tables, Sweeps, Mops, Organizes, and puts away stock.
  • Attend training programs and in-services as scheduled.
  • Complete Relias online training courses by do dates.

Patient Side:

  • Assists in the preparation of patient meals in three locations at CIHA, snacks and beverages, special function meals, and assist with the cafeteria as needed.
  • Receives direction for the hospital dietitian to ensure therapeutic accuracy of meals and snacks served to inpatients.
  • Uses a modified diet spread sheet when working to assemble patient trays.
  • Uses information on tray cards to assemble patient trays.
  • Uses information from the patient cardex to determine patient food preferences, allergies, diet order, and diet changes if needed.
  • Uses the menu substitution log when menu items are substituted.
  • Delivers breakfast, lunch, and dinner trays to inpatient rooms and picks up dirty trays from the nursing station for cleaning.
  • Cover nutrition assistant duties on weekends to ensure that the pantry refrigerator is stocked and cleaned, refrigerator temperature is recorded, and snacks are prepared and delivered and that tray cards and the modified diet spread sheet are used during tray assembly.

Café Side:

  • Assist Cooks with Breakfast and Lunch production, Baking, Frying and heating food items. Making Sandwiches, Wraps, Salads, Desserts.
  • Setting up/Break down Salad Bar. Making Container Salads, Plating up desserts.
  • Running the Cash Register, Managing money, documenting, working with finance department. Taking daily deposits up stairs.
  • Food line set-up. Serving food on the food line, communicating with the customers, Proper break down of food service line. Cleaning and disinfecting service area after each meal.
  • Restocking Café supplies, Snacks, Beverages and paper products.
  • Restock and maintain coffee areas throughout the Hospital

Education/Experience

  • Must have a high school or GED equivalent.
  • Food service and healthcare experience preferred.
  • The food service manager and dietitian will provide training to help the incumbent perform job requirements.
  • Attendance of in-services and educational programs will be provided to maintain job competency.

The Privacy Act of 1974 mandates that the incumbent shall maintain confidentiality of all pertinent patient information that comes to his/her attention. The Privacy Act carries both civil and criminal penalties for unlawful disclosure of knowledge.

Contacts with Others

The incumbent will be in contact with coworkers, patients, dietitian, and other department staff including nursing.

Environment

The work area is often warm, noisy, and cramped. There are possibilities for being cut, burnt, or scalded due to the necessity of working in the kitchen. There is also a danger of slipping on the floor due to food or liquid spills.

Hazards

The work involved may expose employee to communicable diseases. Employees must be familiar and comply with NC Statutes relating to food service work and federal and state regulations pertaining to occupational safety and health, infection control, EPA standards, and HIPAA regulations. Employee must have annual TB test and mandatory Hepatitis A series.

Consistently demonstrates superior customer service skills to patients/customers by demonstrating characteristics that align with CIHA’s guiding principles and core values. Ensure excellent customer service is provided to all patients/customers by seeking out opportunities to be of service.
