The role of the inventory Specialist is to manage the incoming and current inventory, restaurant organization, and communication and tracking of inventory flow.

Inventory Management

1. Truck Order – proficient in InForm, suggested ordering, on hand, and safety stock. 

2. Creating and maintaining the space for all goods – adjusting shelving or space as needed. 

3. All truck, bun, and prep invoices must be reviewed for accuracy. 

4. Identify low or missing items and create plan to purchase or pickup. 

5. End of Month Inventory Count – starts at 2 PM. 

Cost Control

1. QICs must be placed by 10 AM.

2. Daily – check for approved or non-approved QICs. 

3. All LEAN and bins systems maintained to reduce waste

4. Reports: Inventory Activity Report, Food Cost Gap Report, Inventory Extension Report. Communicate gaps and awareness.

2. Spot check high waste items

3. Post on Slack regarding inventory replacement plans 

4. Communicate with Vendors/Suppliers regarding poor product and credits.
