Description

Michael Jordan's Restaurants are a collaboration between Cornerstone Restaurant Group (CRG) and the greatest athlete of his generation, Michael Jordan. Located in the Mohegan Sun Casino in Connecticut, Michael Jordan's Steak House, MJ23 Sports Bar & Grill, and Sol Toro are a collection of elevated food, thoughtful beverages, and Heartfelt Hospitality.

Reporting to the VP of Operations, the Director of Operations has responsibility and accountability for all three restaurants located in Mohegan Sun as well as special projects. This is an on-site role. This role will collaborate cross departmentally with Finance, HR, and Marketing to achieve desired operational and financial results. 

AREAS OF RESPONSIBILITY (including but not limited to): 

Restaurant Operations 

  • Oversee and direct all aspects of assigned restaurants’ operation (guest service, culinary, financial, marketing, quality control, hiring and training) in accordance with established budgets
  • Review progress toward annual restaurant goals and direct GM/Chef as necessary 
  • Direct, mentor, motivate and evaluate General Managers and Executive Chefs/Culinary Director within the assigned set of restaurants. 
  • In collaboration with the VP of Operations and VP of People & Culture, lead management hiring efforts of assigned restaurants.
  • Work with GM/Chef and HR to mentor and coach restaurant management team as necessary to ensure the professional and personal growth of each manager
  • Hold monthly meetings with restaurant leadership and communicate pertinent information/progress to VPO 
  • Conduct quarterly operations audits (dining room, culinary & sales); review audit findings in their entirety and work with team to address areas of concern or non-compliance 
  • Stay abreast of industry happenings, openings/closing, laws, regulations and other industry trends 
  • Work to resolve issues
  • Uphold standards and be a champion of CRG values
  • Lead/manage restaurant renovations and coordinate as needed for facilities maintenance

Financial Performance 

  • Review all financial-related reports (Daily Flash, Target Recap, Narratives, Pace Reports, P&L, inventories, etc.) to ensure operations are in line with established budgets and expenses 
  • Review sales information to ensure progress toward established goals
  • Collaborate with GM/Chef to identify and implement operational adjustments as necessary to achieve maximum financial results (top & bottom line) 
  • Lead annual budget development activities in coordination with accounting team

Guest/Partnership Outreach 

  • Review service levels and service results (Shopper Reports, GSI, LRA, etc.) and direct GM/Chef as necessary to ensure continual adherence to all service standards and expectations 
  • Support operations as appropriate 
  • Review marketing plans and efforts and direct GM/Chef/Marketing as necessary to ensure achievement of all marketing and sales goals 
  • Participate in partnership meetings (Mohegan Sun Casino) as appropriate to maintain and foster strong partnership relationships, to stay informed of key issues, concerns and initiatives and to collaborate with GM/Chef on the development and implementation of plans/processes that respond to and/or support partnership issues/concerns

Requirements

  • Minimum of 10 years operational/management experience in an upscale restaurant environment
  • Proven ability to balance the delivery of programs and quality service against the realities of a budget
  • Broad, hands-on experience with and understanding of the full range of restaurant operations including culinary, service, accounting, marketing and human resources functions
  • Strong knowledge of computerized operating systems such as point of sales systems, Microsoft Office, accounting software

 PHYSICAL REQUIREMENTS

  • Ability to move and lift up to 25 pounds, occasionally move and lift up to 50 pounds.
  • Standing and walking for long periods is necessary to oversee the daily operation.
  • Ability to reach objects, stoop or bend as needed. May be required to utilize a ladder.
  • Ability to see and hear adequately to monitor operations and interact with staff and clients.
