Corralito Steak House is Hiring an Assistant Manager 1 Near El Paso, TX

Corralito Steak House is looking for an Assistant Manager responsible for managing the restaurant's daily operations, including but not limited to employee selection, development, and performance management. In addition, he oversees the inventory and ordering of food and bar supplies, optimizes profits, and ensures that guests are satisfied with their dining experience. Will enforce Corralito’s rules and established policies. The Assistant Manager reports to the General Manager.

  • Objective: Effectively manage the restaurant in the absence of the Restaurant Manager

ASSISTANT MANAGER DUTIES:

  • Responsible for Delivering 70% of weekly client surveys, 50% of personalized manager visits to guest tables, 90% of the restaurant’s cleanliness of the facility, & 90% of the waiter’s service rating.
  • Achieve company objectives in sales, service, quality, appearance of facility, sanitation, and cleanliness through training of employees and by creating a positive and productive working environment.

BAR CONTROLS:

  • Coordinates schedule for weekly inventory recordings with inventory provider. Coordinates proper delivery of all Wine & Liquor invoices to the Inventory Control party.
  • Purchase orders must be made weekly on Mondays based on minimum & maximum, along with the product mix table.
  • Ability to schedule receiving purchase orders no later than 2 p.m. on Tuesdays.
  • You must analyze weekly reports received from “my bar detailed report” and conclude any adjustments or variations from your inventory bar controls; these are to be presented at management meetings on Wednesdays.
  • Responsible for reviewing the bar order inventory sheet. (must sign and correctly date sheet)
  • Responsible for sending promptly (Weekly Wednesdays) bar shortage totals to the accounting clerk.
  • Deliver all invoices to the inventory provider corresponding to the same week.
  • Coordinates Proper accommodations for bar inventory.
  • Establish security norms and updates on Bar Formats or their recipes for proper inventory control.
  • Must supervise the daily cleaning of bar sinks, refrigerators, & food & prep containers, bottle cleaning, and surrounding areas.

FOH & CONTROLS:

  • Supervising checklists, which include the server’s station, main dining room, bar, hostess, desert, and tostadas stations.
  • Responsible for posting EVERY FRIDAY @ 4 P.M.IN POS SYSTEM ATTACHING A PRINTED EMPLOYEE SCHEDULE TO THE SCHEDULE BOARD.
  • The Assistant Manager is responsible for authorizing any requests for time off made by employees.
  • Responsible for being informed of all employee hires, changes, and schedule changes, including employees on the training roster.
  • Responsible for reviewing, being informed, and having on-hand documentation for new hires.
  • Labor Projection for weekly payroll purposes (a Maximum of 28% labor must not be exceeded)
  • Responsible for proposing changes and any new ideas, including but not limited to employee replacements, staff meetings, introduction of new employees to staff, training procedures, and suggestive sales proposals.

QUALIFICATIONS:

  • Prior Restaurant and Management Experience
  • Knowledge and ability to learn touch-sensitive POS Systems
  • Must have reliable transportation
  • Ability to lift a minimum of 25 lbs.
  • Able to work in a high-temperature kitchen for an extended period
  • Completed training in all areas of the restaurant
  • Must be able to take direction and delegate responsibilities
  • Able to obtain/maintain any necessary certifications and licenses.
  • Hours may vary if the manager has to fill in for their employees or if emergencies arise (typical work week = 50 hours)
