As an Executive Chef at Covenant Village, you will play a crucial role in overseeing the culinary operations of our organization, ensuring that our Residents, Guests, and staff have access to delicious and nutritious meals.

As an Executive Chef, you will play a pivotal role in creating memorable experiences for our Residents and Guests. Your primary responsibility is to ensure that every Resident and Guest enjoys the highest quality of culinary offerings. You will achieve this by:

  • Delivering Outstanding Culinary Quality: Collaborate closely with the kitchen team to ensure that every dish served is prepared to the highest standards and presentation guidelines. You will stay informed about menu offerings, ingredients, and preparation techniques to confidently answer Residents’ inquiries and make recommendations.
  • Creating a Welcoming Atmosphere: Foster a positive, welcoming environment where Residents and staff feel valued and appreciated. You will contribute to maintaining a clean and orderly kitchen area upholding our brand's standards of excellence.
  • Engaging in Continuous Improvement: Actively seek feedback from Residents and colleagues to identify areas for improvement. You will participate in training sessions and stay updated on industry trends to enhance your skills in both hospitality and culinary service.

Responsibilities:

  1. Maintains a friendly, efficient, spirit of service toward Residents, staff, guests, and clients.
  2. Creates an environment of pride and quality among all Staff, encouraging them to achieve their highest potential.
  3. Champions the mission, vision, and CV CARES core values of the community with all staff, Residents, and Families.
  4. Adheres to all Covenant Village policies and procedures.
  5. Manages compliance with local, State, and Federal laws and regulations.
  6. Adheres to the 90/10 dining program.
  7. Directs and supervises the Sous Chef, Cooks, food production team, and other Food & Nutrition staff.
  8. Maintains all records and reports necessary to comply with Covenant Village, government, and accrediting agency standards regulations, and codes.
  9. Plans or participates in planning menus and utilization of food surpluses and leftovers, considering probable number of guests, marketing conditions, popularity of various dishes, and menu cycle using Food and Nutrition policy and procedures.
  10. Follows menu cycle with carved meats, monthly monotony breakers, etc.
  11. Ensures that all special diets are prepared and served correctly and on time in the main dining room to independent living residents if ordered by a physician.
  12. Supervises assigned personnel with hiring, managing work performance, supporting, training, and developing each staff member for success.
  13. Schedules and coordinates assigned staff to their job duties to ensure economical and timely food production.
  14. Fills in for the Food Production Supervisor when absent by purchasing, ordering, receiving, properly storing products, and planning food production according to Covenant Village standards of operation and policy and procedure guidelines.
  15. Implements established policies and procedures in ordering and receiving areas to achieve budget objectives by ensuring the highest quality of food is purchased at the lowest cost.
  16. Conducts weekly inventory according to Covenant Village policy and procedures, when needed.
  17. Plans or participates in planning holiday and theme meals as well as menu changes.
  18. Maintains truth in menu accuracy and substitution list.
  19. Ensures production staff takes and records all food temperatures on production sheets for each meal served.
  20. Encourages production staff to taste food items including therapeutic diets.
  21. Establishes and enforces nutrition and sanitation standards for Covenant Village kitchen. Develops and implements sanitation schedules of production and utility staff using “Things to DO”. Makes daily sanitation rounds and completes weekly sanitation inspections each Monday. Follows up with staff to ensure sanitation cleaning is completed.
  22. Devises special dishes and develops recipes. Recognizes and adopts the appropriate menus and recipes to the specific needs of the resident population and demonstrates knowledge of specific issues directly related to the age of the resident population.
  23. Creates and implements signature dishes unique to Covenant Village while staying within budget restraints.
  24. Develops and implements a homemade dessert program to replace convenience items.
  25. Participates in production and relieves production staff as needed. (Call-ins, vacations, sick leave, etc.).
  26. Prepares or delegates all special event functions.
  27. Assists in developing production staff work schedules.
  28. Attends and participates in Food and Nutrition management meetings. Holds and documents daily and weekly meetings with the production team. Incorporates In-service training once per month at weekly Quality Work Group meetings (QWG) using the Food and Nutrition Marketing Plan.
  29. Develops and implements a catering program for marketing Covenant Village and to increase customer satisfaction and quality of life.
  30. Works with confidential staff, Residents, and organization information.
  31. Observes infection control and safety.
  32. Comes to work as scheduled and consistently demonstrates dependability and punctuality.
  33. Participates in weekend management rotation.
  34. Performs all other duties as assigned by management.

Qualifications


An associate degree or equivalent from a 2-year college in Culinary, Hotel & Restaurant, or Food Service-related area of study plus 6 (six) years prior experience is required. Long-term care experience preferred. Must be Serv Safe Certified.

Must be able to perform each essential duty satisfactorily. The requirements listed below are representative of the knowledge, skills, and or ability required. Must be able to read, write, and communicate (both verbal and written) effectively with Residents, staff, guests, and clients. Must have management and leadership skills in addition to good planning and organization. Ability to: write letters, summaries, and reports, using prescribed format and conform to all rules of punctuation, grammar, diction, and style as well as the Covenant Village brand; present information and respond to questions from Residents, groups of managers, staff, clients, customers, and the general public; work with mathematical concepts such as probability and statistics; and apply concepts such as fractions, percentages, ratios and proportions to practical situations. Must be able to see regular print (with or without corrective lenses). Must have an adequate sense of smell and taste to assure food quality. Must have ample feeling in fingers to grasp small objects. Must be able to balance, climb, crouch, pull, push, reach, stand for long periods of time and stoop. Must be able to lift 50 pounds. This position will be exposed to inside and outside environmental conditions including chemical hazards. Adequate safety training and equipment will be provided.
