You will utilize your superior organization and communication skills to quickly address concerns and discover lasting solutions while upholding our high standards for superior guest satisfaction. You will be responsible for developing and implementing the restaurant's policies and procedures and will take ownership in achieving our revenue objectives. Essential Duties
Manage and oversee all base area food operations and all catering operations
Establish restaurant business plan based on budgetary goals and resort growth
Work with HR to recruit staff and train new employees
Create and achieve restaurant operational objectives
Meet restaurant financial objectives by controlling labor and waste
Maintains operations by preparing policies and standard operating procedures; implementing production, productivity, quality, and patron-service standards; determining and implementing system improvements.
Assist in the preparation of annual budgets and scheduling expenditures
Respond efficiently to customer questions and complaints
Establish pars based on forecasted visitation, and maintain all inventories accordingly
Maximize bar profitability by ensuring proper portion control and upholding all LCB codes
Nurture a positive working environment
Monitor operations and initiate corrective actions
Implement innovative strategies to improve productivity and sales
Collaborate with the sales team to ensure the success of all food and beverage events.
Follow and enforce sanitation standards and procedures set by TPCHD.
Work closely with venue Managers and Chefs to ensure product delivery and par levels.
Attending all staff meetings as required.
Event supervision - requiring the ability to communicate in stressful situations, active listening, and problem solving.
Provide guidance and structure, for setting-up events including but not limited to how to clean and set dishware, glassware, silverware, linens, upright pipes, crossbar pipes, drapes, napkins (folded), audio, lighting, any other request approved and outlined within the banquet event order (BEO).
Provide guidance and structure on how to serve food and beverages including alcohol within the standards set at Crystal Mountain and the laws of the Washington State Liquor & Cannabis Board and Washington State Health Department.
Work with Captains to ensure that all pre-function side work is performed to the Crystal Mountain standard and that all equipment is not only accounted for but in good working condition.
Assist the banquet team in execution of events as needed.
Knowledge, Skill, And Ability Requirements
5 years' experience in the restaurant and catering industry
3 years' experience as a restaurant manager
Ability to work in a fast-paced and evolving environment
Food, Bar and Wine knowledge
Fiscal management
High School diploma or equivalent
Availability to work flexible hours including nights and weekends
Excellent interpersonal communication skills
Exceptional organizational and leadership skills
Required valid M.A.S.T. Class 12 or 13 Permit (Washington state serving license)
Required valid Washington Food Worker Card (Health & Food Safety)
PHYSICAL DEMANDS AND WORKING CONDITIONS
This position is required to work evenings, weekends, and holidays while in operation
Able to lift, carry, or otherwise move and position a minimum of 50 pounds on an occasional basis
Manual dexterity to operate a computer and other common office equipment on a constant basis
Ability to work for extended periods of time standing, walking, kneeling, pushing, and pulling occasionally.
