Position Summary
Grassy Creek is seeking a Director, Food and Beverage to oversee Grassy Creek’s Food and Beverage (F&B) operations. The role is responsible for all aspects of the administration, financial performance, and operations of Grassy Creek’s food and beverage operations, including standalone restaurants, beer brewing operations, dining operations within small, all-inclusive, ultra-luxury lodges, and private events of all sizes. The Director, Food & Beverage will have a deep focus on F&B innovation, design strategies for realization of those innovative concepts, and direct implementation of these strategies to ensure thoughtful, consistent, and elevated delivery of our F&B program to maximize profits across the portfolio. This position requires at least 10 years of experience leading a corporate or enterprise-wide, international food and beverage program across multiple full-service hotels and resort properties. The ideal candidate will have experience in the luxury space, and experience with properties in remote locations is considered an advantage. This is a full time, year round position, with compensation ranging from at $100,000 - $145,000 annually, depending on experience and qualifications.

Assess the Grassy Creek and Eleven food and beverage operations;
Identify areas for improvement in product, efficiencies, and profitability; and,
Create a plan to maximize each of these across the portfolio while honoring the unique environment, ingredients, and traditions of each of the lodge and restaurant locations.
Critique the current plan for and support the Irwin Brewing Company and Grassy Creek teams with successful implementation of Irwin Brewing Company’s planned expansion.
Collaborate with the Grassy Creek Asset Manager for Colorado and the Grassy Creek Manager, Sales and Marketing, develop, launch, and ensure success of a private events business in Crested Butte.
Take ownership of overall responsibility for F&B portfolio revenue goals, managing expenses, and controlling labor costs.
Collaborate with Grassy Creek Director of Asset Management, Grassy Creek regional asset managers, and Grassy Creek and Eleven leadership, accounting, financial planning & analysis, marketing, sales, and other individuals to ensure consistent successful performance of F&B operations.
Regularly travel to Grassy Creek food and beverage assets to collaborate with property teams, stay current on the status of renovations and special projects, and remain familiar with the properties’ surrounding markets. Visit Eleven lodge operations on an as-need basis for the same purposes.
Review, benchmark, and analyze property-level, brand, and corporate roll-ups of F&B data.
Oversee the preparation and approval process of Grassy Creek restaurant, Irwin Brewing Company, and Three Daggers Brewery annual operating budgets.
Review draft and final annual operating budgets for F&B aspects of Eleven lodges.
On a monthly basis, review, analyze, and critique Eleven property P&Ls; participate in Eleven property P&L calls.
Provide bi-weekly updates on the performance of Grassy Creek restaurant and breweries through PLM.
Lead all aspects of food and beverage program and facility design for any future additions to the Eleven and Grassy Creek portfolio.
Collaborate with property and product development teams to provide input on F&B concepts.
Contribute insights into creating F&B concepts and spaces that are operationally efficient and market relevant.
Develop and maintain F&B related-project and initiative budgets.
Develop and maintain relationships with food and beverage vendors. Monitor purchases made at all properties, confirming negotiated prices are honored.
Manage all contractors and subcontractors.
Oversee and aid in the administration of all operating licenses.
Qualifications
At least 10 years of experience leading a corporate or enterprise-wide food and beverage program across multiple full-service hotel and resort properties.
Bachelor’s Degree required with a concentration in business, finance, or hotel/restaurant management.
Special Position Requirements
Proven experience introducing and implementing creative concepts and ideas, as well as shepherding ideas from concept to reality in the F&B space.
Ability and experience analyzing operations, identifying opportunities for improvement, and leading teams through change necessary to implement improvements and positively impact profitability.
Comfortable working in a non-structured environment with a variety of stakeholders.
Comfortable building relationships while working in a remote environment.
Computer literacy sufficient to operate spreadsheet and word processing applications (Microsoft Suite to include Excel, Word, Power Point).
Strong communication skills, both written and verbal.
Preferences
Experience in the luxury hotel space.
Experience with properties in remote locations is considered an advantage.
Experience with international operations is considered an advantage.
Some experience with free-standing restaurants is preferable.
Work Requirements
Must be able to lift 50 pounds.
Potential weekend and non-business hour meetings and/or site visits.
Must be able to work with diverse cultural workplace and job sites.
Valid driver’s license
Up to 40% travel expected. Last minute travel can be common depending on the pace and critical needs of the operations.
