Florida Parishes Juvenile Detention Center is looking for a positive individual to join our team as a Food Services Manager!

Our cafeteria-style kitchen operates 365 days per year (7 days per week) to provide nutritional meals to youth in our facility.

Pay range: $52,500-75,000/year, depending on experience and education

This dynamic position will:

• Perform administrative and supervisory dietary work in running the day-to-day operations of a kitchen located in a departmental center where the food service program is conducted.
• Supervision of Food Services staff
• Schedule the daily workload of Food Services Staff
• Coordinate and execute all food ordering, inventory, preparation, storage, and all food service documentation
• Prepare food and supply orders through contracted vendors and submits for approval through the supervising director
• Ensure adequate food and supply inventory for youth and staff, and with special attention to maintaining a minimum of 1 month's supply on hand for periods of inclement weather or disaster (e.g., hurricanes)
• Order and replenish food items using the "first in/first out" method, ensuring that food and other products are used prior to expiration dates
• Provides oversight of Food Services department expenses, in accordance with the facility's established budget
• Compile and maintain a record of Food Service meal data, to include per meal cost, number of meals serves, and identification of areas of efficiency and improvement
• Provide supervision in the preparation of meals and snacks according to the approved menu cycle and standardized recipes that are appropriate for the age group and in compliance with NSLP child meal pattern and Louisiana sanitation code for food safety procedures
• Ensure the menu cycle is comprised of meals that are ethnically diverse, along with being cost-effective
• Ensure that youth on special diets, as ordered by the Health Services Department, receive meals only according to those orders
• Ensure that meals are properly prepared and served according to the schedule
• Ensure that the nutritional needs of youth are met
• Ensure the supervision and maintenance of the kitchen and food storage area and equipment, in a clean, organized, safe, and sanitary manner
• Ensure temperature readings for the cooler, freezer, and dry storage areas are maintained and recorded daily
• Develop a curriculum and programmatic schedule for the education and training of committed youth, in the areas of Food Safety, Food Production, and/or Culinary Arts
• Ensure all applicable policies and procedures are followed by staff
• Utilize performance management through staff evaluations (probationary and annual), disciplinary actions and on-the-job training
• Perform other job-related duties as assigned by Director of Facilities and/or the Executive Director

Additional requirements:

• Must be readily accessible by telephone and email.
• Must possess a valid Driver's License.
• Must be able to work during periods of inclement weather or disaster (e.g., hurricanes)

Desirable Training and Experience:

Minimum Qualifications:

• ServSafe certification or equivalent certification;
• Possession of an accredited associate degree in the Health Sciences; and
• At least 2 years work experience in a supervisory capacity, within a food service industry.

Preferred Qualifications:

• Possession of an accredited bachelor degree in the Health Sciences;
• Possession of an accredited graduate degree;
• Possession of a ServSafe Manager certification;
• Over 2 years' experience managing a food service department of 5 or more employees; and/or
• Registered Dietitian Nutritionist (RDN)
