Pastry ChefAbout The RoleThis position is responsible for managing the pastry team and production. They will plan, organize, control and direct the work of employees. Manage the preparation of sweet items, pastries, cakes, ice creams, sorbets, fruit compotes, chocolates and show pieces according to guest orders and banquet event orders in accordance with production requirements and quality standards while maintaining a safe, sanitary work environment. The Pastry Chef will also be responsible for fostering a culture of creativity and innovation.
What You Will Do
  • Responsible for selection, training, leading and coaching of the culinary staff.
  • Responsible for controlling labor and operating expenses through effective scheduling and inventory control.
  • Develop recipes and ensure the correct preparation and presentation of all pastry items.
  • Prepare pastry items according to guest orders of consistent quality following recipe cards, as well as production, portion, and presentation standards; complete mise en place and set-up station for breakfast, lunch, and/or dinner service.
  • Prepare food items made ahead of time, making sure not beyond estimated needs.
  • Operate, maintain and properly clean kitchen equipment, including deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, and flat top grill.
  • Date all food containers and rotate as per policies, making sure that all perishables are kept at proper temperatures; check pars for shift use, determine necessary preparation, freezer pull and line set up; note any out-of-stock items or possible shortages; return all food items not used to designated storage areas, being sure to cover/date all perishables; assist in setting up plans and actions to correct any food cost problems; control food waste, loss and usage per policies.
  • Communicate with employees and managers to ensure operational needs are met, coordinate tastings and pre-shift meetings with employees, attend regular operational meetings to ensure effective coordination and cooperation between departments and interact directly with guests.
  • Work harmoniously and professionally with co-workers and supervisors.
What You Bring
  • Minimum 4 years pastry experience required and advanced knowledge of kitchen tools and pastry operations.
  • Cooking school or culinary institute education or equivalent experience is required.
  • Previous experience creating and designing menu items and wedding cakes required.
  • Must have working knowledge of computers.
  • Must be able to lift a minimum of 50 lbs and stand for 8 hours.
  • Exhibit excellent interpersonal and time management skills.
  • Demonstrate strong organizational skills and possess the ability to work autonomously.
  • Fluency in English is required for this location and this job requires applicants to have current work authorization in the in the United States.

  • This is a full-time position.
