MOLLIE ASPEN is a new, 68-room boutique hotel that occupies a prime location on Paepcke Park in the heart of Aspen, Colorado. Designed by award-winning studio Post Company, MOLLIE's interiors are subtly inspired by the Aspen tradition of being firmly grounded while gazing abroad - a seamless blend of understated luxury and residential comfort. The property holds a quiet confidence and commitment to a reduction of excess with interiors that thoughtfully utilize native materials from Aspen and the wider Western region, accentuated with natural woods, earthen ceramics, and hand-dyed textiles. The hotel's food & beverage programs are spearheaded by Gin & Luck, the group behind the critically acclaimed Death & Co. brand and consists of a lobby bar and restaurant with year-round outdoor seating and a laid-back all-day café. Set atop MOLLIE's top floor is a rooftop pool and terrace that transforms into an intimate lounge by night, with unobstructed views of Aspen Mountain. MOLLIE Aspen has been developed by HayMax Capital, a leading local development firm, specializing in Aspen hospitality and residential development.
Job Description:We are seeking a visionary and accomplished Sous Chef to assist and lead our Culinary team in all aspects of our kitchen operations. As the Sous Chef, you will play a pivotal role in managing a specific department and work with the Executive Chef to create, implement, and maintain quality standards. In some instances, the Sous Chef will be expected to be responsible for the entire operation in the absence of the Executive Chef.

Job Responsibilities:
  • Provide a strong sense of leadership, including both FOH and BOH hospitality and communication–lead by example.
  • Maintain a strong sense of ownership of all the culinary offerings provided by MOLLIE Aspen.
  • Execute culinary offerings with a high level of precision and care.
  • Provide inspiration and creative influence on the Culinary Team in keeping with MOLLIE Aspen Core Values.
  • Support senior leadership by developing and assuming essential management responsibilities.
  • Supervise the preparation and cooking of various food items.
  • Assist in managing the culinary team, including hiring, scheduling, training, developing teammates, and managing performance, including reviews and succession planning.
  • Maintain standards for facility and food preparation, cleanliness, safety, and sanitation in accordance with applicable laws and regulations.
  • Plan, coordinate & implement special events and holiday functions.
  • Manage hourly kitchen employees through scheduling, payroll, training, coaching, evaluating and hiring.
  • Manage other key culinary leadership roles, including those of supervisor and other culinary staff.
  • Lead and coach the team toward achieving exceptional guest service and employee satisfaction results.
  • Monitor food production, ordering, cost, quality and consistency on a daily basis.
  • Ensure proper safety and sanitation of all kitchen facilities and equipment.
  • Assist with developing and implementing creative menu items that adhere to Gin & Luck brand standards.
  • Oversee and support staff and operations, including shipping and receiving, inventory ordering and maintenance, product rotations, and food waste reporting.
  • Resolve guest issues or complaints and hold staff accountable for guest experience.
  • Administrative duties as needed, including managing budgets, processing transfers, and waste; May act as supervisor in the absence of an Executive Chef.
  • Other duties as assigned.
Operational Efficiency:
  • Maintain inventory levels, monitor food costs, and implement efficient purchasing strategies to optimize kitchen performance.
  • Implement and maintain strict hygiene and food safety standards in accordance with local regulations.
Quality Control and Guest Satisfaction:
  • Conduct regular inspections and tastings to ensure that all dishes meet our high standards of taste, presentation, and quality.
  • Respond promptly and effectively to guest feedback and concerns, striving to exceed their expectations.
Collaboration and Communication:
  • Collaborate with other departments, such as front-of-house staff and management, to create a seamless and exceptional dining experience.
  • Maintain open lines of communication with the culinary team, management, and suppliers to address any operational or ingredient-related issues.
  • Coordinate with legal, human resources and accounting staff on matters pertaining to those departments.
  • Execute payroll in accordance with company pay cycles.
  • Act as manager on duty as needed.

Knowledge, Skills, and Abilities:
  • Excellent guest service and problem resolution skills.
  • Ability to handle multiple tasks and work under pressure.
  • Ability to work flexible schedules including weekends, evenings, and holidays.
  • Spanish language, preferred.
  • Strong leadership and interpersonal skills.
Education and Experience:
  • Proven experience as a Sous Chef in a reputable establishment.
  • Extensive knowledge of various cuisines, culinary techniques, and food safety regulations.
  • Strong leadership and team management skills, with the ability to motivate and inspire a diverse kitchen team.
  • Excellent organizational and multitasking abilities in a fast-paced environment.
  • Exceptional creativity, culinary flair, and a passion for continuous improvement.
  • Effective communication skills to collaborate with team members and provide clear instructions.
  • 3 years of work experience in culinary hospitality.
  • Microsoft Suite competency preferred.
Physical Demands
  • The physical demands for this position are seeing, hearing, speaking, reaching, frequently lifting up to 25 pounds, occasionally lifting up to 50 pounds, sitting, standing, for 4 to 8 hours, bending, and moving intermittently during working hours. These physical requirements may be accomplished with or without reasonable accommodations.
