Division: Food and Beverage
Supervision Exercised: Bar employees, culinary stewarding associates, banquet service/set up, and all F&B associates.
Supervision Received: AGM, General Manager
Job SummaryThe F&B Manager will be responsible for managing the complete operations of Food and Beverage Services: including but not limited to WXYZ bar, beverage programs, culinary operations, Refuel, and the execution of banquet events.
Job Duties
  • Supervise, guide, and direct F&B employees. Establishing and maintaining standards, policies, and procedures. Provide timely constructive feedback on performance to employees to help them to perform their jobs better
  • Prepare schedules, and manage labor expenses based on budgets and business levels. Process daily/weekly/monthly payroll reporting.
  • Assist with recruiting, selecting, orienting, training, assigning responsibilities, coaching, counseling, and disciplining employees.
  • Ensure that Service employees are trained on technical and service aspects of the job, and all preparation of food and drinks follows the brand standards. Provide constructive feedback to employees to help them to perform their jobs better.
  • Work with management to ensure that employees have the necessary resources to effectively perform their jobs. (e.g., supplies, equipment).
  • Routinely provide skill tests to all line cooks and bartenders.
  • Ensure employees have and maintain appropriate certifications for their position.
  • Establish and maintain an effective communication and information system through logs, emails, daily and weekly meetings, and open communication with all departments.
  • Collaborate with management to recognize and celebrate employee performance contributions. (e.g., department recognition programs).
  • Ensure that department goals are communicated, understood, and met by all employees.
  • Assist staff on the floor during all service periods.
  • Meet F&B objectives by contributing information and recommendations to strategic plans by reviewing, preparing, and completing action plans, productivity, quality, and customer service standards.
  • Provide a safe working environment by ensuring compliance with safety programs and Health Department requirements.
  • Responsible for Guest Satisfaction in terms of food and beverage, hospitality, and service standards.
  • Oversee Banquet events by ensuring that rooms are set up in accordance with customer satisfaction and maintaining brand standards.
  • Monitor the performance of the menu, both on guest feedback & profitability. Ensure menu compliance with brand standards. Modify menus routinely and as needed.
  • Maximize food and bar profitability by ensuring portion control and quantities of preparation, minimizing waste, and ensuring high quality of preparation.
  • Manage active bar experience and coordinate compliance with brand standards to include Live @Aloft programming.
  • Ensure compliance with all health department standards and responsible alcohol and food service.
  • Monitor and inspect food and beverage deliveries.
  • Inspect F&B products for proper storage, sanitation, security, neatness, and rotation of inventory.
  • Conduct daily/weekly/monthly inventories for control and ordering.
  • Maintain adequate inventories, place orders, and ensure proper receiving process.
  • Monitor and document liquor pars daily/weekly and monthly. Ensure compliance with bottle-for-bottle exchange.
  • Develop and carry out ideas and procedures to continuously improve the department’s performance.
  • Manage Micros POS.
  • Supervise and reconcile cash controls for each shift in attendance.
  • All other duties as instructed.
MINIMUM REQUIREMENTS
  • High School graduate or equivalent
  • Must have previous Food and Beverage supervisory experience in a similar environment.
  • Prior experience in the culinary field or any similar combination of education and experience.
  • The ability to respond to inquiries, handle complaints and create a sense of satisfaction for employees and guests.
  • Knowledge of safety programs and regulations.
  • Read, write, and speak English fluently.
  • Basic computer skills, including spreadsheets, word processing, and email.
  • Must have an unexpired Food Handlers Safety Certificate.
  • Experience in meeting deadlines and multiple priorities of business demands as required. Possess basic knowledge of business contracts.
  • Must be able to work flexible shifts and schedules, including weekends and some holidays.
  • Must work well with or without direct supervision.
  • Must be neat and well-groomed, at all times.
  • Ability to be mobile for an entire shift. Ability to lift and safely move up to 35 pounds. Ability to twist, turn and reach high places.
  • Needs to be flexible, self-motivated, and positive and have a professional attitude towards guests, co-workers, and management.
