Island Prime / C-Level is Hiring a Sous Chef Near San Diego, CA

COHN RESTAURANT GROUP is searching for a Sous Chef for our premier waterfront location, Island Prime/C Level!

Minimum 2 years of Sous Chef Experience in a high volume setting. Culinary degree is an advantage as well as strong technical ability and a wide range of experience with many styles of cuisine.

Qualifications:

  • High volume dining experience.
  • Be hands on and lead by example. Make a difference every day.
  • Knowledge of California labor laws and other human resource processes.
  • A genuine passion for the hospitality industry.
  • Excellent cost management acumen related to product and labor costs.
  • Knowledge of invoice management, labor tracking, scheduling, food cost controlling, performing inventory and hiring/counseling/termination procedures.
  • Excellent communication and organizational skills.
  • Understanding of all food safety guidelines and the ability to run a very clean kitchen.
  • Follow standardized recipes, portioning and presentation standards.
  • Train kitchen staff in food preparation, safe handling, operation of equipment, food safety and sanitation based on Company and regulatory standards.
  • Ensure that kitchen staff follows and completes schedules as assigned.
  • Maintain inventory of food and non-food supplies to stay within established guidelines while assuring that necessary product is available when needed.

Pay: $50,000.00 - $65,000.00 per year
