2nd Shift FSQA Technician
2:00pm - 10:30pm
POSITION SUMMARY:
To verify all products are manufactured in accordance with our HACCP & Quality Plans, Product, and customer specifications. To verify monitor records are completed in full and assist in coaching employees completing the monitoring documentation. Monitor personnel for GMP compliance and report violations.
ESSENTIAL FUNCTIONS
PROCESSING ROOM:
· Caustic titration to be done on all lines running. If out of spec, the product is placed on Hold.
· Verify raw weights on all applicable products – 2x per shift.
· Verify cooked weights on all applicable products – 2x per shift.
· Verify baked and raw lengths on all applicable products – 2x per shift.
· Verify diameter on all applicable products – 2x per shift.
· Observe shapes and appearances of all products – Hourly.
· Verify Internal Temperature on all products – 2x per shift.
· Verify and record temperature readings on the coolers, spiral freezers, holding freezer and spiral freezers.
· Check lot numbers on all mixer sheets – Once per shift.
· Check a dough mix from start to finish (if applicable).
· Monitor Good Manufacturing Practices.
· Take temperature readings as required on the yeast coolers and spiral freezers.
· Complete Downtime Related Mechanical Breakdowns (when necessary).
· Calibrate Production Scales that are in use – Daily as assigned.
PACKAGING ROOM:
· Pretzel bake off/fry off and complete Sensory Evaluation – Once per shift.
· Verify packing room leader metal detector checks – 2x per Shift. If detector is inoperable the product is placed on Hold, refer to HACCP program.
· Verify all case codes, inner box codes, and date coders – twice per shift. For any inaccurate or illegible codes and place product on Hold.
· Complete/Verify line clearance after each product changeover (start/end of run)
· Verify film, lap codes, and dated codes at the start of each product on each line.
· Verify case count accuracy – 2x per shift.
· Check case weights following Net Weight Verification Program – 2x per shift and observe Packaging Operator in the middle and end of the shift.
· Monitor Good Manufacturing Practices
· Take photo of label/printed box and the date code of each product running with supplied camera– Once per shift.
MISCELLANEOUS DUTIES:
· Thermometer Calibration verification– Monday Only.
· Caliper calibration verification– Monday Only.
· Refrigeration and Freezer Monitor Checks – Once per Shift.
· Verify incoming trucks and ingredients.
· Warehouse spot checks – ingredients, packaging material
· Any further duties that are requested of them pertain to J&J Snack Foods operations and quality systems.
· Walkthrough / Pre-op, which includes microbiological swabbing. This task is performed on a rotational basis.
· Silo inspections at defrost.
· Performs other duties as assigned by Supervisor.

EDUCATION AND EXPERIENCE:
· High School diploma or GED preferred but not required.
· Training will be provided in such topics as Good Manufacturing Practices, HACCP, HRD, Sanitation and Pest Control
· Job Related Experience preferred not required.
