- Assists in determining quality and quantity of food required, assists in planning menus, and assists in controlling food costs. Assists in operating the department in a cost-effective manner.
- Anticipates and maintains staffing patterns based upon volume and approved labor standards
- Assists in monitoring and maintaining overtime utilization within approved limits
- Assists in monitoring absenteeism and ensuring adherence to attendance and tardiness policy as evident by administration of progressive disciplinary action if necessary
- Assists in ensuring employees are paid correctly
- Maintains and demonstrates knowledge of Food Service department policies and procedures. Assists with development and review of department policies and procedures. Assists in ensuring the department meets all required and appropriate standards (Joint Commission, federal, state, and local accrediting, licensure, and/or regulatory bureaus/agencies)
- Strives for cost-containment
- Assists in directing the purchase and inventory control of products so that there is minimum loss from overstocking.
- Assists in evaluating buying agreements and service contracts for cost and department needs.
- Possesses the ability to train and develop new personnel and cross-train existing staff. Assists in ensuring competency of employees using the competency checklist.
