Job Summary/Primary Functions:

Log Still Distillery is seeking experienced Distillery Operator to work in our new distillery. Responsibilities include, but are not limited to, operating the grain handling/milling systems, mash cooker, fermenters, distillation column, gin still, and barrel filling and handling. Candidates must be strong results-driven individuals, hardworking, and interested in working as an important member of our Log Still team. We are looking to building a special operation on a destination campus and are looking for individuals who want to support us in this goal by being part of producing high quality spirits (bourbon and gin),and treating our visitors and guests to an enjoyable and welcoming experience on our campus.

Major Job Responsibilities / Key Duties:

Main Roles:

• Operate multiple systems within the distillery (grain handling, cooking, fermenting, distillation and barreling).

• Write, follow, and maintain up-to-date Standard Operating Procedures.

• Ensure compliance with all state and federal regulations including but not limited to the Environmental Protection Agency and the Occupational Health and Safety Administration.

• Support a culture of safety, where every individual is responsible and accountable for safety.

• Ensure work areas are maintained and in a safe and orderly manner.

• Work to eliminate safety hazards, maintain working knowledge of emergency procedures, and assist site leadership team in meeting site safety objectives.

• Perform normal and emergency startup/shutdown of all equipment

• Accurately manage quality control and perform lab procedures for grain, mash, beer chemistry, and yeast, and document quality and test data and results.

• Support tracking, monitoring, and reporting of Key Performance Indications (KPIs) for productivity, safety, and quality.

Monitor/operate/understand automated system (HMI screens) through computers and gauges to oversee and adjust the process accordingly.

• Actively support site leaders and team members in efforts for continuous improvement throughout the site.

• Collaborate with various departments including supply chain and hospitality to ensure production needs are met while also hosting visitors through the distillery.

• Troubleshoot, inspect, test, maintain, and clean all facility equipment including, but not limited to, mechanical equipment, electrical equipment and digital, pneumatic and manual instruments.

Skills / Experience Required:

• Minimum of three years of experience in bourbon production processes.

• Working knowledge of distillation processes for bourbon and gin spirits and overall distillery operations.

• Ability to work overtime, holidays, and weekends.

• Experience driving a forklift in a production/warehouse environment.

• Ability to perform math calculations (e.g., proofing calculations).

• Proficiency with personal computers / laptops and associated programs (Windows, Microsoft office suite of programs).

• Effective oral communication skills: ability to talk to others to convey information effectively; strong written communication skills

Desired Skills:

• Maintenance / mechanic experience, specifically with boilers, chillers, and water treatment processes.

• Commercial Driver’s License a plus.

Education Required:

• High School diploma

• Associate’s or advanced degree a plus

Special Working Conditions (e.g. Temperature Extremes, Lifting, Noise, Off-shifts)

• Must be 21 years old.

• Ability to stand for long periods and climb up to 20 feet on a ladder on a regular basis.

• Must be capable of physical labor (including bending, stooping, kneeling, climbing, reaching, etc.) on a regular basis.

• Must be capable of regular heavy lifting (able to lift at least 50-70 pounds).

• Must be able to work in extremely hot, cold, loud, and dusty conditions

• Must be able to traverse the distillery/campus quickly.

• No allergies/sensitivities to spirits distilling environment
