Job responsibilities: The Cook is responsible for assisting with the preparation of all facility meals.Essential Functions
  • Prepare and cook quantity of food required according to menu and production sheet.
  • Maintain kitchen equipment in orderly workable condition. Ensure work area is safe, clean and sanitary at all times.
  • Ensure the count and control of knives and other controlled kitchen tools. Provide an accurate count of all controlled items at the beginning and end of each shift.
  • Prepare foods as directed for special facility functions and special diets when prescribed by staff doctor.
  • Assist in cleaning kitchen work areas following each meal.
  • Coordinate the work of inmates assigned to assist in the cafeteria, which includes long periods of sitting and standing.
Education And Experience Requirements
  • High school diploma or equivalent and one (1) year of food service or related experience required.
  • Must possess a valid food handler’s permit in the state of New Mexico or the state of Texas.
  • Valid driver’s license in the state of New Mexico or the state of Texas with an acceptable driving record required, unless waived by management.
