Marbridge Foundation is Hiring a Dietary Services Manager Near Manchaca, TX

We currently have an opportunity for a Full-time Dietary Service Manager at our 92-bed Skilled Nursing Facility, located in Manchaca, TX (just south of Austin). The Marbridge Foundation is a long-term care facility that provides specialized care to adults with intellectual disabilities.

The Dietary Services Manager reports to the Director and will supervise the Dietary Department, providing direct supervision of the Dietary Manager (kitchen manager). This position is responsible for the Dietary Department of the Villa including, but not limited to, menu planning, food production, care plans, patient assessments for preferences, MDS updates, consulting with Registered Dietician, Nurse Management, and Speech Language Pathologist for Care Planning, complying with all licensing and health codes, appropriate documentation, maintaining the departments budget, approving employee and resident employees time and time off requests and staffing the dietary department.

Essential Duties and Responsibilities

  • Participate in regular conferences with the Administrator and Nurse Management.
  • Assist in development of dietetic policies and procedures
  • Supervise Dietary Manager
  • Implements Documentation in the form of Nutrition Assessments, progress notes, care plans, MDS and other appropriate methods. Uses the Nutrition Care Process for standardized documentation.
  • Provides information and education to both staff and residents/families on an ongoing basis. Assists in providing in-services for the facility as needed/requested. Provides diet/nutrition educational materials for residents and can deliver diet/nutrition education counseling directly to residents/families.
  • Develops and implements quality assurance performance improvement programs to ensure that quality services are provided.
  • Remains current with research and sharing updates with staff as needed.
  • Plans diets (to be reviewed by R.D. if applicable)
  • Develops appropriate menus and supervises the purchasing, handling, preparation, and storage of food. Also supervises the maintenance of equipment, records and sanitation.
  • Maintains a file of standardized recipes adjusted to the proper yield.
  • Overall responsible for food production and service
  • Responsible for the Dietary Department’s budget
  • Approves Employee and Resident Employee’s time and time off requests.
  • Assesses residents for food preferences.
  • Complies with all codes and standards for documentation and sanitation, including, but not limited to:
  • Diets Served, Menus, Purchase Records, Diet Cardex, Diet Roster, Tray Cards/Identification System
  • Health Inspection requirements and necessary certifications/licenses
  • Monitor’s Resident’s weight and hydration
  • Ensures that all diets are prepared and serviced in accordance with Physician’s orders; unless the resident refuses and that is properly documented
  • Assists with kitchen duties as staffing needs require
  • Other similar duties as assigned

Supervisory Responsibilities:

Directly supervises Dietary Manager. Ultimately responsible for all Dietary Staff.

Equipment to be used:

Must be able to operate various industrial kitchen equipment. Must be able to operate a computer and other various office equipment.

Physical Requirements:

  • Position requires frequent walking, standing, and sitting.
  • Must be able to lift up to 50 lbs.
  • Position may require shift flexibility, resulting in occasional long hours

Education, Experience, & Skills Required:

  • Registered Dietician OR a 4 year degree in a related field and a minimum of 2 years of dietary management experience
  • Ability to perform essential tasks of position
  • Genuine heart for people with intellectual and developmental disabilities
  • Ability to read, write, and speak English
  • Demonstrate a working knowledge of the Hazardous Waste and Product Rules, Blood Borne Pathogens and Universal Precautions.
