Job Details
DescriptionSupervises the preparation, seasoning, cooking and presentation of foods for all foodservice programs; provides initial and ongoing personnel training, development and evaluation; collaborates with Executive Chef in creating and executing innovative menus for meal service and special functions (Family Nights, Public Relations Events, and Holiday Meals); responsible for daily quality control for all food served; enforces adherence to sanitation program. Operates/utilizes kitchen equipment (e.g. oven, steam table, slicer, etc.) to prepare meals for residents, family, staff, guests, and catered events. Responsible for physical inventory of food and supplies; receives and puts away stock items; places orders on computer with internet access; collaborates with Executive Chef to evaluate vendors and products to negotiate for the best balance of price, quality and service. Performs administrative duties as assigned (examples include but not limited to: creating work schedules, processing payroll, annual evaluations of assigned staff members and processing vendor invoices for payment.) for the Dietary Department. Provides Administrative coverage “Deemed Person in Charge” of the Dietary Department in the absence of the Executive Chef (i.e. Vacation, Sick leave, etc,). Attends all mandatory education and in-services (i.e. team training, safety, infection control, etc.); completes mandatory health requirements. Demonstrates regular and predictable attendance. Employee performs within the prescribed limits of the hospital’s and department’s Ethics and Compliance program and is responsible to detect, observe and report compliance variances to their immediate supervisor, or upward through the chain of command, the Compliance Officer, or the hospital hotline. Performs other duties as required or assigned.
RequirementsAssociate of Occupational Sciences (AOS) Degree in Culinary Arts or culinary certificate or three (3) to five (5) years of culinary experience preferred. A minimum of two (2) to five (5) years of culinary / kitchen management experience is preferred. Knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls and presentation. Computer knowledge of Microsoft Office Applications (ie Word, Outlook, Excel.) Applied Food Service Sanitation (ServSafe Certified).
