Summary: The Assistant Manager for Food and Beverage ensures that the Company's vision, goals and objectives are met. This position ensures that quality nutritional food is provided to all customers and that professional standards are met and maintained in the unit. Provides leadership to the total team to ensure a positive guest experience while exceeding financial goals.

Essential Job Functions

• Assists with the procurement, production, and service of food to all customers to achieve financial and non-financial objectives.
• Interacts with customers and resolves customer complaints in a friendly and service-oriented manner.
• Assists with profit and loss and budgeting.
• Works with the Chef and management team in creating menus and providing top quality food.
• Assists in the responsibility for all food service-related activities and be primarily involved in meal services in food venues; including quality improvement, sanitation, infection control and all facility-related activities.
• Assists with the rollout of new culinary programs.
• Monitors inventory and places orders utilizing quantities on hand.
• Assist in establishing cleaning schedules and other sanitary controls as required by the county and or state health department and Company policy.
• Assists with maintaining the highest rating on health inspections and corrects any deficiencies

Minimum Requirements:

• Minimum 3 or more years' supervisory experience.

Preferred Education and Experience:

• Previous experience in retail, entertainment or hospitality industry.
• Knowledge of merchandizing techniques within a food service setting
• ServSafe certification

Supervisory Responsibility: This position has 50-75 direct reports.

Reporting Structure: Reports to Food Service Manager.

Position Type/Expected Hours of Work: This is a full-time salaried exempt position which regularly requires evening and weekend work.

Work Environment: While performing the duties of this job, the employee frequently works in food service venues and on Zoo Grounds. The employee is occasionally exposed to wet and/or humid conditions, fumes or airborne particles, chemicals and vibration. The noise level in the work environment is usually quiet while in the office, or moderately loud while on Zoo grounds.

While performing the duties of this job, the employee is frequently required to sit, talk and hear. The employee is constantly required to use hands and fingers to feel, handle or operate objects, tools, or controls; and reach with hands and arms. Specific vision abilities required by this job include close vision, distance vision, peripheral vision, color vision, and the ability to adjust focus.
