Description

I. PURPOSE OF POSITION
Responsible for the total operation of Nooksack Northwood Casino’s food and beverage activities and venues, insuring quality products and delivery of high-level service according to established policies, procedures and health codes. 

Reporting Relationships

  • Reports Directly to: Casino Operations Manager
  • Supervises: All Food and Beverage Employees
  • Other Contacts: General Managers, Human Resources, Tribal Council, Vendors, Health Inspectors, Dept. Managers, Customers and Community Members

DUTIES AND RESPONSIBILITIES

A. Oversees the preparation and compliance of budgets for Food and Beverage outlets, including all Casino restaurants and bars.

B. Develops and executes departmental plans and goals for all areas under direct control.

C. Forecasts revenue projections and monitors cost controls.

D. Assists in budget variance explanations in conjunction with other Kitchen and Food and Beverage Staff at monthly meetings.

E. Assists in presenting improvement proposals and justification for capital expense items for equipment and other major purchases and projects.

F. Establishes and maintains effective communication between food and beverage departments to ensure that staff is aware and prepared for all daily and special event activities.

G. Ensures maintenance of safety and sanitation standards and policies, assuring compliance with Indian Health Services guidelines, standards and regulations.

H. Works closely with Marketing to develop menu and restaurant advertising, keeps current with all special events and promotional activities.

I. Manages inventory of all food and beverage equipment and products.

J. Develops menus in close coordination with the head of the kitchen.

K. Oversees and participates in interviewing process for key staff members.

L. Interviews, reviews and evaluates performance of departmental supervisors.

M. Negotiates programs with vendors to maximize product value.

N. Promotes continuing improvement in the performance of the department and its employees.

O. Monitors all departmental disciplinary action.

P. Such other job-related duties as may be assigned by instruction from executive management.

Q. Sets a positive leadership example.

R. Hires, trains, disciplines and supports employees and supervisors under direct control.

S. Ensures quality service and product at all food and beverage areas and outlets.

T. Other duties and responsibilities as assigned.

Qualifications


POSITION QUALIFICATIONS
Required:

  1. Demonstrated success in the operation and management of a multi-outlet food and beverage facility.
  2. Demonstrated ability to effectively lead a large, multi-cultural, and diverse workforce.
  3. Demonstrated ability to manage cost controls and minimize food and beverage costs while maximizing quality and delivery of product.
  4. Demonstrated ability to coordinate staff effectively and elevate service levels.
  5. Demonstrated knowledge of cost-effective food preparation, beverage selection, service, sanitation, and employee relations.
  6. Demonstrated ability to manage retail food outlets.
  7.  Demonstrated ability to manage inventory control.
  8.  Ability to obtain and maintain a Nooksack Tribal Gaming Agency License and Class III Washington State Gaming License.
  9.  Must obtain and maintain a class 12 mixologist permit. 
  10. Must obtain and maintain their TIPS certification. 
  11. Must obtain and maintain their Food Handlers Permit.

Preferred:
1. Successful experience in the primary duties of the position in a gaming/casino operation
