RESPONSIBILITIES :
1. Ensures preparation of foods according to standardized recipe in the correct amount needed for patients and cafeteria food service.
2. Organizes and prepares food according to cooking schedule in order to have food ready on time but not too far in advance of meal service.
3. Evaluates quality of purchased food items and advises director if a product does not meet standards.
4. Prepares individual servings according to portion control standards.
5. Maintains routine for cleaning and sanitizing kitchen.
6. Operates all electrical, gas and steam cooking equipment in a clean, sanitized, and safe manner.
7. Assists in training new cooks.
8. Set foods up on the steam table in cafeteria and patient services area. Replenishes these areas during servicing times if necessary.
9. Assists in checking in deliveries as needed.
10. Serves as the hot food server for patient tray service.
11. Ensures stock is rotated and storage areas are maintained in an orderly fashion.
12. Prepares pureed items.
13. Checks menu schedule for foods that need preparing or thawing ahead of time and ensures these items are prepared.
14. Keeps slaw and salad cut up and in the refrigerator as appropriate (not too far in advance).
15. Keeps Jell-O made up in both regular and diet.
16. Prepares special function meals as requested.
17. Replenishes stock on the nursing units as requested.
18. Stores left-over’s that can be saved for use and labels with date, item name, and initials.
19. Ensures rotation and usage of left-over’s in cook’s refrigerator or freezing them for later use.
20. Cleans gas range, top tilt skillet (when used), grill, steamer, and steam jacket kettle.
21. Participates in the training of employees in the correct cleaning procedures of the department, use of the kitchen equipment, and proper storage.
22. Reports any piece of equipment that is not working properly either to the supervisor, director or maintenance.
23. Responsible for the functions of the kitchen and staff during the absence of management.
24. Follows sanitation regulations set by the state including thoroughly cleaning and sanitizing work area directly after use, wearing gloves when hands may come in contact with the preparation surface of containers, utensils and when serving foods.
25. Breaks down boxes as they are emptied and places them in recycling cart.
26. Reports the presence of insects or rodents in the department.
27. Assumes responsibility for attending all required in service education classes including safety update.
28. Understands and adheres to department and hospital safety, fire and disaster procedures.
29. Knows location of SDS manual; understands and uses it according to guidelines.
30. Ensures the department’s dress code is observed including shoes with toe and heel in and non-skid soles and hair covering.
