Description

Position responsible for all the food and beverage operations, which includes all culinary, restaurant and beverage operations. Oversees guest and employee satisfaction, maintaining standards and meeting or exceeding financial goals. Demonstrates knowledge and proficiency of all applicable food and beverage laws and regulations. Develops and implements business plan for food and beverage. Maintains the operating budget and verifies that standards and legal obligations are followed. Develops specific goals and plans to prioritize, organize, and accomplish work.

CORE WORK ACTIVITIES

Finance

• Maintains a positive cost management index for kitchen and restaurant operations.

• Utilizes budgets to understand financial objectives.

• Proper management of the annual operational and capex budgets

• To produce monthly operational information

• To produce daily revenue for the accounting system

• To ensure proper stock control procedures are in place.

Leading Food and Beverage Team

• Oversees all culinary, restaurant and beverage operations.

• Supervises and manages employees.

• Utilizes interpersonal and communication skills to lead, influence, and encourage others; demonstrates honesty/integrity; leads by example.

• Creates and nurtures a property environment that emphasizes motivation, empowerment, teamwork, continuous improvement, and a passion for providing service.

• Responds quickly and proactively to employee's concerns.

• Encourages and builds mutual trust, respect, and cooperation among team members.

• Monitors and maintains the productivity level of employees.

• Ensure that rosters are planned effectively and efficiently to minimize overtime (and ensure compliance with working hours legislation)

• Develops specific goals and plans to prioritize, organize, and accomplish work.

• Sets clear expectations with the team and recognizes if expectations are exceeded.

Ensuring Exceptional Customer Service

• Sets, maintains and monitors operational standards.

• Responds quickly and proactively to guest's concerns.

• Understands the brand's service culture and drives alignment of all employees, team leaders and managers to it.

• Sets service expectations for all guests internally and externally.

• Takes ownership of a guest complaint/problem until it is resolved, or it has been addressed by the appropriate manager or employee.

• Improves service by communicating and assisting individuals to understand guest needs, providing guidance, feedback, and individual coaching when needed.

Hygiene, health and safety

• Maintain health, safety and hygiene standards in the work areas.

• Ensure that all safety procedures are adhered to.

• Ensure that all staff are aware of and have access to the Emergency Response Plan

• Ensure that the teams participate in hygiene, health and safety, HACCP, and COVID-19 related training.

Managing and Conducting Human Resource Activities

• Provides guidance and direction to subordinates, including setting performance standards and monitoring performance.

• Ensure that a clear, comprehensive and up to date job description is attached to the employment contract and is updated on an ad-hoc basis.

• Conducts performance reviews in a timely manner.

• Promotes both guarantee of fair treatment and open-door policies.

• Provides a learning atmosphere with a focus on continuous improvement and proactive coaching and counseling.

• Identifies the developmental needs of others and coaches, mentors, or otherwise helps others to improve their knowledge or skills.

• Identifies the educational needs of others, develops formal educational or training programs or classes, and teaches or instructs others.

• Ensures compliance with the Training and Localization Policy and assists with any internal training required.

• Ensures that each new employee is inducted to company vision, mission, values and beliefs.
