Overview:
The Tulu-Beach Grill Bar Supervisor is responsible for supporting both Beach Grill and Tulu Management Team by managing all bar/beverage operations. This will include Bar Operations, Beverage Service in Dining Areas, and Take-Out/Delivery. The Bar Supervisor will be responsible for hiring, staffing, and training a fungible bar team that can work in both Tulus and Beach Grill. They will be responsible for leading a Best in Class beverage program featuring creative, profitable cocktail recipes, delivering a quality beverage service experience, ensure that all bar set up is to specification, and the bars are meticulously clean at all times. The Bar Supervisor is a “Working Bar Supervisor” and will spend 8 hours a week of Administrative Time (May-Sep), and 4 Hours (October-March). The balance of the time will be spent behind both Beach Grill and Tulu Bars.
Responsibilities:
Monitors quality control, consistency, and pour portions in all service wells and bars
Responsible ordering and maintaining proper par levels for all liquor, beer, and wine for Tulu and Beach Grill.
Ensures all bar SSI Set Up is documented, communicated, and maintained. This includes back bar merchandising and organization.
Responsible for Maintaining all Beverage COD Checkbooks
Ensure all Wells, Coolers, and service areas are set up for optimal production and maximum productivity
Ensures all Birch Street and Bevinco Recipes are accurate, updated, and spot checked for quality compliance.
Conducts weekly pour tests for bartenders
Responsible for scheduling bar staff (Bartenders and Bar Backs) Beach Grill Tulu Bars in Hot Schedules by Thursday of Each Week
Ensures all Schedules are on budget; in accordance with weekly revenue forecasts
Responsible for the accuracy of all bar training documents/handbooks, and that all bar staff follow the daily training steps, and final training documents are posted to the Source
Responsible for providing Service staff updated and accurate
Responsible for maintaining proper par levels for all glassware, and plastic drinkware, bar supplies, and mixes
Responsible for ensuring all garnishes, house made mixers, and juices preparation is completed to spec, and in designated prep areas.
Responsible for development and delivery of all beverage tests; both for the bar staff and the service staff.
Responsible for conducting final interviews and screening for all Bar Staff
Responsible for the set up/opening of Beach Grill Bar, and end of season breakdown and removal of equipment.
Responsible for maintaining uniform pars for all bar staff, and uniforms and grooming standards for bar staff is enforced.
Responsible for contributing to daily staff line ups, and providing daily educational and training tips to the front of house service staff
Through the PHR Menu Development Process Assists in the development of spirits programs, to include bar menu development, and recipes.
Oversees completion of all daily opening and closing checklist, as well as running sidework for all bars.
Collaborate with Tarnished Truth Spirit Specialist in development and delivery of spirits training for Tarnished Truth Spirits
Participates in continuing self-study and education
Insures all PHR Cash Control processes are monitored to SOP
