Position: Bakery Manager
Reports To: General Manager
Position Summary:
The Bakery Manager is responsible for the overall success of bakery product production. This person ensures guest satisfaction through the monitoring of proper preparation procedures, adherence to recipes, proper packaging, and adherence to all company standards.
Additionally, the ideal candidate for the Bakery Manager position should possess a deep understanding of artisan baking techniques, including proficiency in yeast breads, quick breads, sourdough starters, laminated doughs, and classic pastries.This expertise ensures the ability to uphold the bakery's commitment to high-quality, handcrafted baked goods.
The Bakery Manager operates the bakery production facility, bakery retail, and ice cream shop according to all Health Department guidelines and national food handling and safety standards. The Bakery Manager also executes daily operations according to the guidelines given to them directly by the Owner, General Manager, and the Employee Handbook.
The Bakery Manager hires, trains, and develops their team to deliver perfectly executed baked goods, along with exceptional service in both the bakery retail area and ice cream shop. This person consistently inspects the work of all other employees on the shift to ensure they are set for success.
The Bakery Manager ensures that all team members follow recipes accurately, use the opening and closing checklists for their station, comply with daily production guides, and follow daily cleaning schedules. The Bakery Manager is also responsible for bakery food cost, ice cream costs, and bakery labor cost controls along with any financial or administrative tasks assigned to them by the General Manager.
This person is responsible for placing and receiving all bakery ingredient and ice cream orders while maintaining productive vendor relationships.
The Bakery Manager is responsible for the development and growth of all bakery production, bakery retail, and ice cream shop employees using regular evaluations and goal setting to assist them in this process.
The Bakery Manager is the “leader of the team,” knowing each staff member’s strengths and areas of opportunities and knowing how to motivate each team member as an individual.
The Bakery Manager maintains the bakery building and all production and storage equipment in top notch condition within a spotless environment. This person ensures that the bakery is always inspection ready.
The Bakery Manager collaborates with the Owner and the General Manager to set seasonal menu direction and production levels, and to create cost effective specials.
Duties and Responsibilities:
The duties and responsibilities of the Bakery Manager include, but are not limited to:
• Coordinate daily bakery production operations
• Set daily production pars
• Place and receive all bakery ingredient and ice cream orders
• Monitor all employees for proper execution of recipes
• Monitor bakery retail and ice cream shop employees for efficient, knowledgeable, and hospitality focused service
• Conduct line checks and tastings every shift to ensure food quality
• Maintain all bakery equipment in good repair
• Ensure that all food is prepared according to company standards and that all storage, holding, and heating guidelines are followed
• Monitor the completion of all daily and weekly cleaning schedules
• Ensure compliance with sanitation and safety regulations
• Monitor daily labor and react to variances from projected sales
• Deliver bakery food cost at or below budget
• Deliver all assigned controllable costs at or below budget
• Work with vendors to ensure best prices and best quality product
• Ensure that all specials and menu changes are brand appropriate and cost effective
• Consistently, evaluate, develop, and coach and counsel bakers and ice cream employees
• Create a learning environment by providing continuing education opportunities for all staff

Their ability to connect with, understand, motivate, and challenge each staff member, along with their ability to productively deal with stress is critical to the success of the bakery.
