Overview

The Shift Lead is responsible for assisting in all aspects of bread, pastry, and viennoiserie production including portion and inventory control, food quality, and consistency. The Shift Lead provides a consistent product, helps to set and implement systems and standards, and ensures all staff on shift are focused and demonstrating a guest-centric attitude and culture. The Shift Lead reports to and works directly with the BOH Assistant Store Manager in all aspects of bakery production, innovation and product quality.

Responsibilities

• Verify that all product specs, quality standards, department rules, policies and procedures are maintained by kitchen employees.

• Train new employees on kitchen standards, recipes, and systems.

• Has a flexible schedule to occasionally cover both AM, PM and weekend shifts.

• Assist with regular kitchen duties whenever possible, i.e., prep and production, baking, restock, inventory, cleaning and organizing the kitchen.

• Maintain high standards of quality and appearance of all food prepared and served.

• Inventory production items daily and start a prep list for the next day.

• Project production for Viennoiserie items and ensure mixes/lamination are executed to avoid lapses in product availability.

• Actively hones their own skill and assists others in doing the same.

• Partners with BOH ASM and General Manager with testing recipes and product innovation.

• Adheres to and ensures accountability around company policies, including but not limited to, cash handling, product standards, safety standards, cleanliness standards, facility maintenance and hospitality best practices. 

• Maintains safe, cash drawers, cashier turn-ins and deposits per documented cash handling procedures as needed.

• Supervises ongoing cleaning needs of the pastry space.

• Identifies efficiencies/inefficiencies in production.

• Provides input regarding functions, menus, policies, etc.

• Communicates directly with the BOH Assistant Manager of the ongoings in the department.

• Performs inventory responsibilities and submits to the BOH Assistant Manager to input.

Qualifications (Knowledge, Skills & Abilities):

• ServSafe Manager certification

• 1 year of BOH experience in a bakery, with knowledge of bread or viennoiserie.

• Strong leadership skills, ability to motivate teams to consistently produce great food

• Possesses a desire to teach, learn and utilizes a problem-solving approach

• Ability to multitask and adapt in a high volume, high energy atmosphere. Works well under pressure.

• Passion for good food and quality customer experiences

• Excellent communication and organization skills.

• Must be able to legally work in the United States

Physical Demands & Work Environment:

• Able to work a flexible schedule to meet the needs of the business, including evenings, weekends, and holidays

• Able to grasp, lift and carry up to 50 pounds as needed

• Able to maneuver effectively around the kitchen, restaurant office, and up/downstairs
