SMGHA Nevada, LLC is Hiring a Buffet Executive Sous Chef Near Las Vegas, NV

Working closely with the Executive Chef the Buffet Executive Sous Chef will play an important role overseeing the culinary team for their department, focusing on creative, health-conscious, and unique cuisine while maintaining high standards of sanitation, strong cost control initiatives and a superior gastronomic experience for our corporate and social groups. Core Job Responsibilities: Create and foster a work environment focused on teamwork, open communication, recognition, fairness and employee satisfaction and retention. Manage, mentor, train and coach chefs and hourly team members. Maintain a strong working relationship with vendors, clients, and other departments. Oversee daily operations of the kitchen ensuring efficiencies and high standards of cleanliness, organization, and sanitation. Daily review of all BEOs, SEOs, MEOs and Group Resumes to ensure groups’ culinary needs are being met in a timely and cost-effective manner. Develop kitchen productivity standards and metrics to improve efficiencies in the culinary operations. Consistently ensures strong cost controls to maximize the profitability of the department. Continuously updates catering menu to ensure food cost budget is being met while delivering seasonally fresh product. Manage all vendors to ensure timely and accurate delivery of product. Maintains strong inventory control to maximize profitability and minimize waste. Must present a well-groomed appearance. Ensures compliance with SNHD regulations for sanitation. Perform other job duties as requested. Consistent and regular attendance is an essential function of this job. Qualifications: Culinary degree or a minimum of seven years in an upscale catering position within a high-volume resort. Proficient in Microsoft Office. Food Handler’s Card and ServeSafe Certified required Proof of eligibility to work in the United States. Physical Demands: Work is performed in a fast-paced setting. Must be tolerant to varying conditions of noise level, temperature, illumination, and air quality. May be exposed to smoke The noise level in the work environment is usually moderate to loud. Constant contact with executives, department management, employees, and guests. Prolonged sitting or standing and mobility. Balancing, stooping, kneeling, crouching, reaching, pushing, pulling, lifting, grasping, talking, hearing, repetitive motions Lift, carry, push, pull or otherwise move objects and/or move up to 50 pounds occasionally Eye/hand coordination. Use of standard office equipment.
