Position Title:Director of Concessions

Department: Impact Catering

Reports To:Senior Vice President of Impact Catering

Supervises:Concessions Senior Manager, Manager, Supervisors and Staff

Job Responsibilities

  • Lead the concessions team in offering exceptional customer service and creating unforgettable experiences for our guests.
  • Oversee day-to-day concessions operations and manage the concessions department to achieve the best possible financial results.
  • Evaluate all aspects of concessions initiatives and activities, including, but not limited to, food and beverage items, services and promotions.
  • Monitor and analyze concessions sales performance, expenses and profitability.
  • Coach employees through a shared understanding of what needs to be achieved and how to execute.
  • Lead, mentor, engage and develop teams to maximize employee contributions.
  • Recruit, assess, train, schedule, manage, recognize and reward team members.
  • Develop and maintain effective client and customer rapport for mutually beneficial business relationships.
  • Identify client needs and effectively communicate operational progress.
  • Manage POS system and mentor team on how to properly operate the system.
  • Build revenue and manage budgets including cost controls for food, beverage and labor, achieving food and labor targets and managing resources to ensure quality and cost control withing budgetary guidelines.
  • Ensure completion of maintenance and P&L statements.
  • Implement and maintain Oklahoma State Fair and OKC Fairgrounds agendas for both labor and food initiatives.
  • Create value through efficient operations, appropriate cost controls and profit management.
  • Direct and oversee operations related to production, distribution and food service.
  • Monitor vendor(s) performance and compliance with contractual terms.
  • Manage non-profit group contracts and ensure the groups are following all health and safety standards.
  • Properly staff all events and make real-time adjustments as the business dictates.
  • Ensure safety and sanitation standards are met in all operations to maintain a safe and healthy environment for clients, customers and employees.
  • Maintain positive relationships with vendors, suppliers and other external partners.
  • Assist in other departments as needed.
  • Other duties as assigned.

Additional Job Requirements

  • At least 7 years of experience in a similar position is required with at least 4 years in a management role.
  • Must be an experienced operations leader focused on people and quality standards.
  • Bachelor’s degree or equivalent experience is required.
  • Availability to work event-based hours, to include evenings, weekends and holidays, is required.
  • Valid liquor license/alcohol service (ABLE) permit and food handling certificate as required by state and federal regulations.
  • Ability to handle cash accurately and responsibly.
  • Basic math skills (addition, subtraction, multiplication, division, percentages) as they relate to POS/Micros cash/credit transactions, cash reconciliation and product inventory.

  • Perform detailed work in a team-oriented, fast-paced, event-driven environment handling multiple tasks with flexibility in a calm, professional manner.

  • Maintain high standards of appearance and grooming (i.e., clean, wrinkle free clothing, proper uniform/attire, close attention to personal hygiene).
  • Meet the company standard for excellent attendance, job reliability, diligence and dedication.
  • Possess a valid driver’s license and a clean driving record.
  • Speak, read and write in English.

Physical Requirements and Working Conditions

  • Extended hours, nights and weekends may be required during peak periods.
  • Frequent or continual movement from place to place with normal physical mobility, covering long distances with ease, managing assigned tasks throughout various indoor and outdoor locations within and around the property and in potentially inclement/severe weather conditions.
  • Regularly lift, carry and put away items weighing up to 50 lbs. and occasionally lift and carry heavier items and/or assist others in lifting heavier objects, as job demands.
  • Walk and/or stand for extended periods in addition to other prolonged physical exertions including seeing, hearing, reaching, grasping, lifting, pushing, pulling, squatting, crouching, stooping, bending, kneeling, climbing and working in awkward positions and tight areas may be required.
