Position Title: Lead Cook

Summary:

Under the general supervision of the Manager of Nutrition and Food Service or Supervisor in his/her absence, the Lead Cook performs a wide variety of duties relative to the handling, preparation, presentation and service of food for consumption by patients, staff, visitors and community.

Responsibilities:

  • Coordinates kitchen staff in the proper preparation, cooking and garnishment of various menu items to hospital standard recipes
  • Alerts supervisor to any concerns, discrepancies, product shortages, etc.
  • Assist other cooks when necessary.
  • Willingly adjusts schedule and/or job position to accommodate department’s needs.
  • Adheres to policies to control food cost and quality.
  • Ensures proper receiving, storage (including temperature-setting) and rotation of food products so as to comply with Health Department regulations.
  • Reports any equipment in need of repair to chef and engineering, for service.
  • Coordinate tasks in a manner that increases efficiency so that food is delivered on time.
  • Participates in menu planning, discussions and activities.
  • Participates in daily cleaning of walk-in and reach-in boxes for safety reasons.
  • Exhibits knowledge of appropriate preparation and presentation in quality soups, sauces, proteins, vegetables and starches.
  • Prepares food in quantities that meet the day’s demands and provide for minimal waste.
  • Tastes each prepared item for flavor, temperature and consistency. Adjusts seasonings accordingly.
  • Ensures that food prepared by the department reaches the customer at its optimal level of freshness.
  • Consults Food Service Director and/or Food Service Manager when making menu substitutions.
  • Ensures food is prepared and cooked per established policies and procedures. Proper portion sizes are observed.
  • Ensures food items are prepared by specified times.
  • Scratch cooking techniques are practiced whenever possible.
  • Tests prepared food for doneness. Takes corrective action when necessary. Documents final cooking temp on Production Record.
  • Understands how to safely operate and maintain all food production equipment used in the facility.
  • Consults with the Food Service Manager and/or Supervisor regarding the use of leftovers.
  • Production Record and waste logs are kept daily.
  • Understands and completes, as assigned, documentation to support Q/A indicators and data collection tools for improving productivity and quality of outcomes as evidenced by Q/A outcomes being within the targeted range.
