JOB RESPONSIBILITIES:
  • Responsible for supporting the Director of Food and Beverage in all aspects of food beverage quality, cost control, and completing inventories.
  • Respond to all inquiries regarding the financial performance of the food and beverage department.
  • Monitor and ensure that food and beverage operating procedures are met on a consistent basis.
  • Communicate effectively with front and back of house management and staff.
  • Oversees the flow of beverage service on the gaming floor and at all property bars.
  • Provides day to day leadership direction to the Assistant Beverage Managers, Assistant Restaurant Managers, Room Chefs, Sous Chefs, Pastry Chefs, Restaurant Leads and Beverage Leads.
  • Demonstrate the ability to perform the duties of all restaurants, bars and service wells.
  • Monitor and control labor within the department.
  • Maintain adequate coverage in all outlets based on business demands.
  • Responsible for hiring, training, evaluation, and corrective counseling of food and beverage team members.
  • Ensures all team members follow recipes, measurements, quantities, and other information so each item served can be duplicated consistently.
  • Ensure all prep items are made to approved standards.
  • Confirms that all opening and closing checklists are adhered to and product(s) stored and secured.
  • Inspects serving areas to ensure observance of safe, sanitary handling practices.
  • Make certain all product(s) is placed and restocked in designated areas.
  • Maintain a solid knowledge of all food and beverage products and ensure all products are properly rotated.
  • Immediately research and resolve any malfunctions of equipment to ensure optimum operation and minimal down time.
  • Inspects all restaurants, bars and service areas to ensure all products are properly labeled and dated to ensure safekeeping and sanitation.
  • Ensures all food and beverage team members are using all cleaning equipment, chemicals, and sanitizing products in accordance with all MSDS sheets and departmental standards.
EDUCATION AND EXPERIENCE:
  • 3-5 years previous management experience in both beverage and food service preferred.
  • High school diploma or its equivalent.
  • Must be 21 years of age or older.
  • Must pass all required pre-screening and background checks.
  • Internal candidates must meet the eligibility requirements as provided in the Transfer and Promotion policy.
  • Ability to work a variety of shifts, this includes day, swing, late-night, weekend, and holiday shifts as scheduled.
  • Must be able to obtain and maintain a valid Kentucky gaming/racing license.
