Starting at 2 AM, the Fish Cutter is responsible for expertly breaking down a variety of fish, including tuna, salmon, Chilean bass, and more, to meet our high standards for quality and precision. This role demands attention to detail, knowledge of fish species, and the ability to handle knives and other cutting equipment safely and efficiently.
