Job Responsibilities: Total charge of the operation in the absence of the General Manager. Follow and support the direction from the GM. To include the duties as outlined below.
Duties:
1. SERVICE
- Exceed guest expectations by ensuring flawless service.
- Provide communication to the GM regarding feedback from guests.
- Exhibits and maintains an excellent working knowledge of standard operating procedur
- Expresses and documents feedback to service staff relating to performance
- Heightens awareness of staff members about product sales and marketing.
- Tracks trends in sold items to maintain an acceptable sales level.
- Recognition and awareness of VIPs and special guests needs, likes and dislikes.
- Effectively seats dining room and manages reservation book using business trends.
- Conducts pre shift food and beverage tasting, taking action where appropriate.
- Exhibits and maintains excellent working knowledge of computer system.
- Maintains accurate wine, beer and liquor inventories.
- Utilize liquor and beer order sheets.
- Participates in month end inventory and communicates results to the Corporate Office.
- Analyzes income statement and related notes and takes action where appropriate.
- Exhibits and maintains excellent working knowledge of marketing plan and group even
- Conducts all staff meetings in absence of GM.
- Develops and maintains relationships with hotel concierge and other hotel staff.
- Maintains and develops relationship with public relations firm. *
